KARNIYARIK Stuffed Eggplants Ingredients :   5 medium sized eggplants  2 medium sized onions. 3 medium sized tomatoes 300 grams ground meat Pepper 2-3 pieces ½ bunch of parsley ½ tablespoons of tomato paste 1 cup of vegetable oil (for frying eggplants) 4 tablespoons of olive oil Salt, black pepper
KARNIYARIK HOW TO MAKE :   Wash the eggplants.  Peel eggplants leaving lengthwise stripes  and then put them in salty water for  3 0 minutes.
KARNIYARIK Dry them well and fry them   as a whole in a deep pot with vegetable oil   .
KARNIYARIK And then, dry on a paper towel. P lace eggplants on an oven dish. With the help of two spoons, s p lit eggplants into two.  But leave the tops and bottoms attached.
KARNIYARIK In a deep frying pan, heat olive oil.  Add onions and stir for 3-4 minutes.  Add ground meat and cook . And then add tomato paste, stir until cooked.
KARNIYARIK Add chopped parsley and tomatoes. Add salt and pepper. Mix well.
KARNIYARIK Stuff eggplants with ground meat mixture.  Place a slice of half moon shaped tomato and a green pepper on top of each split belly eggplant.
KARNIYARIK Pour 1 cup of hot water on top . Bake them in preheated oven at 150 C until green peppers are nicely baked.
KARNIYARIK Serve with rice and yogurt.   Good appetite !  
