Monday – Chicken Enchiladas'"A spicy chicken and chili pepper mixture is blended with a creamy soup mixture, rolled up in flour tortillas, and baked with Cheddar cheese on top. Recipe1 Can of chicken soup1 (10.75 ounce) can condensed cream1/2 cup sour cream1 tablespoon margarine1 onion, chopped1 teaspoon chili powder2 cups chopped cooked chicken breast1 (4 ounce) can chopped green chilipeppers, drained8 (8 inch) flour tortillas1 cup shredded Cheddar cheeseDirections:1. Preheat oven to 350 degrees F (175 degrees C). 2. In a small bowl mix the soup and sour cream; set aside. 3. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and sauté until tender. Stir in the chicken, chili peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through. 4. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla. Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese. 5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned

Garlic Chicken Pizza - RecipeIngredients1 1/8 cups warm water (110 degrees F/45 degrees C)1 1/4 teaspoons salt1 1/2 teaspoons vegetable oil3 cups bread flour2 tablespoons dry milk powder2 teaspoons active dry yeast 2 tablespoons cornmeal1 cup roasted garlic and parmesan cheese sauce1/4 teaspoon granulated garlic10 ounces mozzarella cheese, shredded2 grilled skinless, boneless chicken breast, diced1/4 red onion, sliced1 tomato, cut into thin wedges1 green bell pepper, seeded and dicedDirectionsPlace ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start. Preheat oven to 475 degrees F (245 degrees C). Sprinkle a large pizza pan with cornmeal. Roll or pat dough out on a lightly floured surface until it is the diameter of the pizza pan; place on pan. Spread dough with sauce, then sprinkle with garlic. Cover with cheese. On top of the pizza, arrange chicken, green pepper, onion and tomato. Bake in preheated oven for 20 to 25 minutes, or until dough is baked, cheese is melted and toppings are lightly browned.

Chicken Fried Chicken - RecipeIngredients30 saltine crackers2 tablespoons all-purpose flour2 tablespoons dry potato flakes1 teaspoon seasoned salt1/2 teaspoon ground black pepper1 egg1/4 cup vegetable oil6 skinless, boneless chicken breast halvesDirectionsPlace crackers in a large resealable plastic bag; seal bag and crush crackers until they are coarse crumbs. Add flour, potato flakes, seasoned salt, and pepper to bag and mix well. Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat. One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat. Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.
