Kanava Thoran
Ingredients
500 gms Cleaned Squid tubes
15 gms Coconut Oil
100 gms Sliced Onions
10 gms Chopped Garlic
10 gms Chopped Ginger
15 gms Fresh Green Chilies slit length-wise
A Sprig of Fresh Curry Leaves
3 gms Turmeric powder
5 gms Red Chili Powder
5 gms Coriander Powder
10 gms Fennel Powder
Salt to taste
100 gms Fresh Grated Coconut
10 gms Kodampuli (kokum) soaked in warm water for 10 mins
5 gms Crushed Black Pepper Corn
Procedure
Cut the squid into 1/4 inch thin rounds.
Chef Ashokkumar
Heat Coconut oil in a Pan, and Sauté the Onions, add the Chopped
Garlic, Ginger, Green Chili and Curry leaves.
Add all the spice powders and salt. Add the squid slices and cook
covered until done on a medium heat.
Open lid and add the kodampuli(kokum) and its water. Also add the
black pepper powder and stir well. Cook until the moisture is dried.
Finish it with Fresh grated Coconut and serve hot.
