Ada Pradhaman
Is a classic dessert or traditionalpayasam of Kerala.
Palada payasam (prepared with rice ada, milk and sugar)
Ada pradhaman (prepared with jaggery, rice ada and coconutmilk) is especially
popular during the festival of Onam. It is an integral partof Onam Sadhya Menu.
Ingredients
100 gmsRice Ada
25 gms Tapioca Pearlsor Sabudhana or Javarisi
250 gmsJaggery
250 ml Thin coconutmilk
100 ml Thick coconutmilk
15 gms Coconutbits or thin small pieces
25 gms Cashew nuts split
25 gms Raisins
Pinch Green Cardamom powder
30 gms Ghee or Clarified Butter
Procedure
To the boiing water add rice ada , switch off the stove and let it soak for 30
minutes.
Drain the water completely and rinse the ada 2-3 times in cold water , to prevent
the ada from sticking to each other, and keep it aside for some time.
Soak Sago or Javarisior Tapioca Pearlor Sabudhana in water, and boilin sufficient
water.

Dissolve jaggery in half cup of water and strain it to remove impurities if any.
Remove from pan.
In a pan, heat coconutmilk and jaggery untilit thickens.
Once it thickens, add the thin coconutmilk (1 1/4 cup). Cook on medium flame
until it thickensagain.
Add the boiled ada and Sago , allow to simmer .
Heat 2 tsp of ghee and fry the cashew nuts, raisins and coconutpieces separately.
Now add the fried cashew nuts, raisins, cardamom powder and coconutbits. Mix
well and switch off the flame.
Once it cools, it will thicken further.
