concentration of essential minerals like iron (8%),
zinc (10%), calcium (9%), and selenium
(>30%) in milk.
• An increase in 80% of the fatty acid
composition of milk samples collected
from cattle supplied with moringa leaf.
• The increase was from 5 to 56.3%

Activity 1: Completion and Promotion of Product Development
• Keeping Quality of Moringa-Based Products:
o Bread: Higher moringa inclusion significantly reduced bacterial loads,
showing no E. coli or yeast/mold growth over three days.
o Soup: Moringa-enriched soup maintained lower bacterial counts
compared to control over a 12-day period.
• Energy Bars: Excellent microbial stability observed over 15 days,
supporting extended shelf life.
Higher moringa concentrations showed reduced bacterial loads, with no
detectable levels of E. coli or yeast and mold in any samples.
• Product Labeling and Packaging:
o Draft labels and packaging designed to comply with local and
international market standards.

• Market Registration Requirements:
o Regulatory data collection completed, focusing on food safety standards,
certification, and compliance protocols.
• Community Risk Assessment:
o Designed and implemented a survey to identify risks associated with moringa
consumption.

Activity 2: Introduction of Moringa-Based Products to SME Market
 SME Partner Selection:
o Developed criteria to assess SME readiness, including production capacity, market
reach, and financial stability.
Partnerships are underway for commercialization.

Activity 3: Production of Moringa-Based Pellets
o Literature reviews and preliminary formulations for dairy cow feed completed.
o Feeding trials initiated at Holeta Agricultural Research Center.
o Feed pellets formulated with 10%, 20%, and 30% moringa inclusion
o Remaining activities:
 Comprehensive nutritional analysis.
 Animal trials to evaluate effects on milk quality and yield.
