Gluten is a protein found in wheat, rye, and barley that can cause a spectrum of disorders. Celiac disease is an autoimmune disorder triggered by gluten that damages the small intestine and can cause problems absorbing nutrients. Wheat allergy is an immune reaction to wheat proteins. While celiac disease requires strict gluten avoidance, gluten sensitivity is when individuals experience negative symptoms after gluten ingestion. The gluten-free diet is only medically necessary for those with celiac disease to prevent intestinal damage but removing gluten alone does not determine diet quality.

Gluten is the main structural protein complex of
wheat with equivalent toxic proteins found in other
cereals, including rye and barley.
Possibly the introduction of gluten-containing
grains, which occurred about 10,000 years ago with
the advent of agriculture, represented an
evolutionary challenge that created the conditions
for human diseases related to gluten exposure.

not the same thing as blood sugar
problems caused by the carbohydrates in
wheat. It’s true that getting a majority of
calories from wheat (especially refined
wheat) can cause metabolic problems
like blood sugar swings.

• CD is a genetic, autoimmune
disorder that occurs in reaction
to the ingestion of gluten.To
develop celiac disease a person
must inherit the genetic
predisposition, be consuming
gluten, and have the disease
activated.
• Wheat allergy is an immune reaction
to any of the hundreds of proteins in
wheat.When a person has a wheat
allergy, one type of white blood cells,
called B-cells, send out
immunoglobulin E (IgE) antibodies to
“attack” the wheat.
• At the same time, local tissues in the
body send out natural chemical
messengers to alert the rest of the
body that there is a problem.

CONNECTED?
• Celiac disease can cause damage to the small intestine where iron,
folate, and vitamin B12 are absorbed.
•The most common sign of celiac disease in adults is iron-
deficiency anemia that is unresponsive to iron therapy.
•Iron and folate anemias are seen more often in people
with celiac disease because these nutrients are absorbed
in the upper two parts of the intestine where damage can
occur in earlier stages of celiac disease.

• Common misconceptions
about the gluten-free diet;
• If an individual whose diet contains
large amounts of breads, pastas and
cookies (especially those made from
refined flours) switches to a gluten-free
diet which eliminates these foods while

healthful gluten-free foods, the
resulting diet would likely be healthier.
Individuals who have celiac
disease require a gluten-free
diet for health
reasons. Ingestion of gluten
in these individuals causes an
adverse reaction which
damages intestinal cells and
can lead to serious health
problems!!!
• The presence or absence of gluten
alone is not related to diet
quality. What’s important is the
overall food choices made within the
diet, whether it’s gluten-free or not.
