As
  a
  student
  almost
  finished
  with
  the
  nutrition
  counseling
  practicum,
  I
  have
  gained

experience
  that
  I
  will
  appreciate
  for
  years
  to
  come.
  I
  have
  demonstrated
  understanding
  of

human
  nutrition
  in
  a
  clinical
  and
  community
  setting
  and
  learned
  concepts
  and
  skills
  related

to
  successful
  learning
  and
  development.
  I
  have
  learned
  and
  worked
  under
  skilled

registered
  dietitians
  in
  the
  nutrition
  center
  that
  have
  become
  wonderful
  mentors
  to
  me.

Shadowing
  client
  counseling
  sessions,
  helping
  with
  RMRs,
  and
  helping
  with
  dining
  with

diabetes
  has
  reinforced
  why
  I
  am
  studying
  dietetics
  and
  why
  I
  hope
  to
  become
  a
  registered

dietitian.

The
  various
  client-‐counseling
  sessions
  I
  have
  been
  able
  to
  sit
  in
  on
  were
  so
  different

from
  each
  other
  and
  interesting
  to
  learn
  from.
  I
  learned
  counseling
  techniques
  similar
  to

client-‐centered
  therapy
  and
  motivational
  interviewing,.
  I
  am
  so
  grateful
  that
  Shelby
  gave

me
  so
  much
  responsibility
  and
  is
  allowing
  me
  to
  help
  with
  the
  most
  recent
  client
  I

shadowed.
  Everything
  I
  have
  learned
  through
  shadowing
  Kelsey
  and
  Shelby
  has
  been
  so

pertinent
  to
  the
  core
  classes
  I
  am
  taking.
  I
  successfully
  completed
  the
  course
  goal
  of

providing
  anthropometric
  measurements,
  nutrition
  assessment,
  and
  nutrition
  counseling

of
  individuals
  with
  the
  registered
  dietitians.

Working
  on
  Dining
  with
  Diabetes
  in
  Weld
  County
  was
  a
  great
  4-‐week
  experience.

Cooking
  and
  learning
  from
  Kelsey
  giving
  the
  lectures
  were
  great
  practice
  for
  future

programs
  I
  may
  be
  involved
  with.
  This
  was
  an
  opportunity
  that
  has
  enhanced
  my
  personal

and
  professional
  growth.

The
  health
  fair
  I
  worked
  at
  was
  a
  good
  test
  for
  sharing
  information
  on
  the
  spot.
  It

showed
  me
  that
  I
  am
  knowledgeable
  and
  able
  to
  communicate
  information
  affecting
  health

in
  ways
  that
  are
  accessible
  to
  people
  with
  a
  range
  of
  educational
  and
  cultural
  experiences.

The
  various
  questions
  required
  me
  to
  think
  and
  respond
  fast
  because
  the
  people
  were

eager
  to
  move
  onto
  the
  next
  table.

The
  supermarket
  tour
  was
  one
  of
  my
  favorite
  outreach
  activities
  because
  it
  was

practical
  and
  helpful.
  I
  enjoyed
  talking
  with
  CSU
  students
  who
  were
  interested
  in
  nutrition

and
  lived
  a
  similar
  lifestyle
  as
  me.
  It
  was
  informal
  and
  fun
  while
  being
  educational
  and

informative.
  I
  was
  nervous,
  but
  successfully
  communicated
  to
  the
  students
  about
  various

supermarket
  shopping
  strategies
  and
  facts
  about
  fats
  and
  oils.

All
  in
  all,
  I
  feel
  that
  I
  was
  successful
  in
  service-‐learning
  activities,
  nutrition
  center

activities,
  and
  outreach
  activities.
  I
  will
  value
  the
  experiences
  I
  had
  and
  professionals
  I
  met

for
  years
  to
  come.
  I
  feel
  better
  prepared
  for
  my
  future
  in
  dietetics
  after
  I
  graduate
  from

Colorado
  State
  University
  because
  of
  this
  practicum.
