shown in an exhibition made entirely by one extraordinary 69 year old Buddhist monk in Nepal
named Shashi Dhoj Tulachan, a second generation thangka artist living. The practice of thangka art
has been around for centuries and is carried out by highly trained monks for the purpose of teaching
about Buddha and the tenets of the Buddhist religion. The paintings attracted me because they were

he used are made from natural mineral pigments. The painting also attracted me because of the
action packed space and the texture. Although it is covered with imagery and patterns to every
inch, this thangka still has the balance and harmony that are quite hard to find in other similar

coffee shop located in the Lennox Town Center. In order to capture the establishment s peak hours
of business, we primarily visited during the hours of 9:00am 12:00pm. We focused our attention on
orders for baked goods, coffee, and espresso drinks, as these products are the shop s main source
of revenue and reputation. On several separate mornings we were able to observe an average of
125 orders over three hours (a takt time of 1.44 minutes). In the evening, there were often less than
a dozen orders every hour. Since every order is slightly different, we have described the average
order and the steps in the process that are consistent in almost every situation. We have identified

(Kuhnlein, Turner, 1991). Many of these foods are available in the market today; however, 40 70%
of Yukon First Nations, Dene/Metis, and Inuit, depending on location and age group, could not
afford enough food. In addition, nearly 50% of these people did not have adequate fishing or
hunting equipment, and 46% could not afford these activities (Lambden, Receveur, Marshall,
Kuhnlein, 2006). Without proper equipment and financial security, obtaining traditional foods is
becoming increasingly difficult. Modern processed foods are more readily supplied to remote
Aboriginal communities because they are cheaper to produce and purchase and have a longer shelf
life. The Government of Canada has provided a Food Mail program to subsidize the cost of
transporting more nutritious foods to remote communities, but these foods are usually still too
expensive for many families to afford. As a result, many more Aboriginal Peoples are purchasing
