Cold Brew Basics
Coffee
• Supplementing time for temperature, easy way to extract
• With constant routine, a lovely way to enjoy a variety of coffee and
nuances between origins
• brewing with a higher coffee to water ratio, we create a
concentrate that can be diluted to taste
Blue Bottle’s Three Africans-
-An approachable blend for all brew methods, as a cold brew this
coffee exihibits its natural Ethiopian component with a juicy berry
sweetness
-For Filtron:
-1lb of course ground coffee to 1 gallon cold water
Cacao Nibs
• Really delicate way to taste another caffeinated product
• Cacao can be ground up in spice grinder and infused from 16-24hrs
• Can be brewed along with coffee or in milk to achieve different
profiles
Dandelion Chocolate Madagascar Cocoa Beans
-Madagascar cacao is known for its fruit heavy profile and rich
chocolately body. As a cold brew it exhibits a subtle cocoa bod with a
silky fruit acidity
-Filtron
-6oz of finely ground cacao nibs per 1 gallon water
Peru Cacao and Blue Bottle’s Three Africans
-This is a blend of my own roasted chocolate from Peru with our
Three Africans blend. The acidity of the cacao and the vibrant berry
profile of the coffee come together for a mocha profile and fruit forward
goodness.
-Hario Tornado
-3oz finely ground cacao, 2oz of coarse ground coffee per
½ gallon
Tea
• Carefree way to enjoy caffeine and hydration in the morning.
• With 20g per liter of water, you can get a refreshing expression of
most teas.
• 12hrs of brewing is sufficient, full leaf green or white tea and black
teas brew beautifully up to 24hrs

-A Chinese green tea sourced by Chicago’s own Kilogram Tea. We
have a very delicate umami characteristic with a refreshing nutty body

- 25grams per liter of cold water

-South Africa’s popular rooibos tea is a caffeine free herb that
brews a rich vanilla and sweet tobacco infusion. As a cold brew it exhibits
a lovely body with a syrupy mouthfeel
