Summary

I started in a dish room and worked my way through the kitchen eventually
making it to Certified Grill Master then onto Culinary Professional. I
assisted managers in running the kitchen and helped in every day
management tasks such as pre-shift paper work, food counts, and training
new team members.

When promoted to management I wanted to focus on increasing the bottom
line on the Monthly P&L and decreasing overall waste. I spread knowledge
to my culinary team of the high waste items using weekly and monthly
waste charts. Highlighting top waste items and listing the action plan in each
area in the kitchen.
To boost sales I wanted to make it fun for the sales team making bingo cards
listing several appetizers, drinks, and desserts. Making table top drink menus
listing fun sounding specialty drinks that were not on the normal menu, such
as Rum Runner, Grass hopper, and even one called the Zombie. Making the
job fun makes it easier to do and helps grow profit.

Went to DACC for 2 years and received a certificate in Mechanical
