Mojo Corner at St. John’s Institute, Bacolod City
INTRODUCTION
Let’s be honest here: it’s not the pizza that’s the best part of one popular fast food chain’s
menu; it’s the mojos. These spuds are iconic, a trademarked specialty of the said food business
establishment, that has helped cement its status worldwide as a reliable place to dine. Recreating
these mojos at home was always incredibly difficult – how do they get their distinct flavor? How
does the breading get a crispy coating that gets delightfully soggy in parts?
These questions have always been thought of the proponents. That is why with Zapatatas
Mojo Corner, they have decided to come up with an original homemade recipe similar to that
establishment’s mojos. Zapatatas Mojo Corner is a food business establishment that caters the
needs and cravings of High School Johnians. It serves its specialty – mojos – together with assorted
frozen food products ranging from chicken nuggets to squid rings exclusively made from the
production plant of the LLZ Frozen Foods Corp. There will also be an an array of choices for dips,
which will make Zapatatas’ appeal to the Johnian Community level up more.
In line with giving the quality service they want for the Johnian Community, like any other
business establishment, the proponents hope to receive a good-enough return on investment. They
will be spending on the ingredients, the marketing materials, and everything in between. The five-
man team will also be giving promos during the first few days of operation to kick-start the
business. At the end of the project, they will be giving surveys that will rate of their service and
product quality. After all, it’s the proponents goal to give the best product and service possible.
Finally, with the partnership of Zapatatas Mojo Corner with LLZ Frozen Foods Corp., the
proponents hope to help one of their groupmate market his family business as well.

Chapter I
PROJECT BACKGROUND
I. Project Proponents
Lauren Louisse L. Zapata
Chief Executive Officer and President
Lauren Zapata is a Junior High School graduate of the Christian Academy of Bacolod and
is currently a Grade 12 Senior High School Accounting, Business, and Management (ABM)
student of St. John’s Institute. He is the eldest child and son of Mr. and Mrs. Jay Ralph and Daisy
Jane Zapata, who are the owners of LLZ Frozen Foods Corp. The family has a production plant
located at Talisay City, where an average of 60 employees work. For college, he will be taking up
Marketing at the University of St. La Salle in order to strengthen the family business in the future.
Leah Angela Cioco
Chief Operating Officer and Vice President
Leah Cioco is a Junior High School graduate of St. John’s Institute and is currently a Grade
12 Senior High School Accounting, Business, and Management (ABM) student of the same
school. She is the eldest child and daughter of Atty. Leopoldo Jr. and Yvonne Cioco, who are the
senior partners of the Cioco, Cioco, & Cioco Law Office. The family has a firm located at Bacolod
City, which currently holds an average of 1,000 cases with a majority of corporate lawsuits. For
college, she will be taking up Actuarial Science and Global Economics at Stanford University.
After four years of undergraduate study at the United States, she will be attending Law School at
the University of the Philippines.

Crystal Faith T. Canillo
Production Manager
Crystal Faith Canillo is a Junior High School graduate of Gil Montilla National High
School and is currently a Grade 12 Senior High School Accounting, Business, and Management
(ABM) student of St. John’s Institute. She is the seventh and the youngest child of Mr. and Mrs.
Jose and Carmen Canillo, who are the owners of Bienze Cakes, which is a bakery shop located at
Sipalay City. With her family business behind her, Crystal is accustomed to baking and everything
in between. She will be taking up Accountancy for college at the University of the Philippines and
Culinary Arts afterwards.
Heather Marie F. Jara
Marketing Manager
Heather Marie Jara is a Junior High School graduate of Marie Margarette School and is
currently a Grade 12 Senior High School Accounting, Business, and Management (ABM) student
of St. John’s Institute. She is the second and youngest child of Mr. and Mrs. Amiel and Lily Jara,
who are the owners of Travelzania Travel and Tours Inc. and WPQ Marketing, which are both
located at Ilo-ilo City. Heather will be taking up Marketing Management at the University of St.
La Salle, Bacolod.
Mikko Gerald Mari C. Sardua
Sales Manager
Mikko Gerald Sardua is a Junior High School graduate of St. John’s Institute and is
currently a Grade 12 Senior High School Accounting, Business, and Management (ABM) student
of the same school. He is Mr. and Mrs. Michael and Miranda Sardua, who are the owners of
SpinWheels Bacolod Auto Gallery, which is located at Bacolod City. With experience in helping
at the family business, he is capable to manage the business’ sales. Mikko will be taking up
Accountancy at the University of St. La Salle, Bacolod.

II. Primary Focus
The proponents of the project have decided to focus on the potential market in the St. John’s
Institute High school campus. The aim of the Zapatatas Mojo Corner is to provide the Johnian
Community an affordable yet hearty food option at the St. John’s Institute Bacolod City Campus
by providing large servings of mojos that could be paired with different side dishes like nuggets
and squid rings purchased from LLZ, Lauren Zapata’s Frozen Foods Corporation. To shake things
a bit, there will also be an array of choices for dips.
III. Vision Statement
To be recognized as a leading, distinctive brand of food business establishment in school
that provides affordable, hearty, and delicious snacks comprised of an original homemade recipe
of mojos, dips, and LLZ Frozen Foods side dishes.
IV. Mission Statement
Zapatatas Mojo Corner is committed to serving fresh, delicious, and affordable mojos
coupled with an array of delicious side dishes through its partnership with LLZ Frozen Foods
Corporation to all members of the Johnian Community at St. John’s Institute.
V. Objectives

Follow the hacked recipe online, which
consists of: Ferna Breading Mix, Sliced
Potatoes, eggs, water, cooking oil for deep
frying, Lady’s Choice Ceasar or Ranch
Dressing. In a bowl, whisk together eggs and
water. Set aside. Clean potatoes and slice into
1/4” round, then put them straight into the egg-
water mixture to soak. Heat oil until 350
degrees F. Coat potato slices with breading and
deep fry in batches for 3-4 minutes. Drain in
kitchen towel after to absorb excess oil.
Transfer to serving plate and serve with either
Caesar or ranch dressing.

25PHP, including side dishes and dips
VI. Proposed Name of the Business: Zapatatas Mojo Corner
The proponents have decided to use “Zapatatas Mojo Corner” as the food business
establishment’s name simply because one of the proponents’ family name is Zapata. This group
member is also the son of the owners of LLZ Frozen Foods Corp.
VII. Desired Outcome
Like any other business establishment, the main goal of Zapatatas Mojo Corner is to
generate income or profit. To gain profit, the proponents will be selling mojos; these golden
potatoes are not only delicious and healthy, but also easy to make or produce.

MANAGEMENT ASPECT
I. Personnel
Lauren Louisse L. Zapata, Chief Executive Officer and President
A chief executive officer (CEO) is the highest-ranking executive in a company, and
Lauren’s primary responsibilities include making major decisions and managing the overall
operations and resources.
Leah Angela Cioco, Chief Operating Officer and Vice President
Leah will oversee Zapatata’s business operations and reports to the CEO. She will also
ensure the company has effective operational and financial procedures in place acting as the main
point of communication between the Ms. Ma. Angela and group operations.
Crystal Faith T. Canillo, Production Manager
Crystal is the assigned person to make and produce the products to be sold. She will also
plan and organize production schedules, assess project and resource requirements, negotiate and
agree on budgets and timescales with clients and other managers.
Heather Marie F. Jara, Marketing Manager
Heather is assigned in making marketing materials for the business. She will also be
managing all marketing for the company and activities within the marketing department,
developing the marketing strategy for the company in line with company objectives, coordinating
marketing campaigns with sales activities, and overseeing the company's marketing budget.
Mikko Gerald Mari C. Sardua, Sales Manager
Mikko is assigned to manage the inflow and outflow of assets. He will also be achieving
growth and hitting sales targets by successfully managing the sales team, designing, and
implementing a strategic sales plan that expands company's customer base and ensure it's strong
presence.

Lauren Louisse L. Zapata as the Chief Executive Officer and President is qualified as he
is an ABM Student and a big help to his parents’ business. He is also a huge fan of big companies
like Google and Apple, which means that he’s always following the going-ons of the CEOs.
Leah Angela Cioco as the Chief Operating Officer and Vice President is qualified as she
is accustomed to co-leading business projects. She is also an ABM student, which means that she
has had enough experience.
Crystal Faith T. Canillo as Production Manager is qualified as she is experienced in
cooking. She is also an ABM student, which means that she is practical enough to make sure that
the cost of production will be effective and efficient.
Heather Marie F. Jara as Marketing Manager is qualified for the position of Marketing
Manager because she is also an ABM student, who specializes in Marketing
Mikko Gerald Mari C. Sardua is very much qualified for the position of sales maanger
as he is an ABM Student, with strength in Marketing during the past two quarters.
