Emmanuel LEGRIS started his oyster farm in lilia
(brittany, France) in 1986. During the next 30 years he
developed his oyster farming techniques and acquired
a knowledge he would later pass down to his sons.
What defines LEGRIS oysters are mainly the quality of
the environment they grow in, and the know-how with
which they are farmed. the oyster beds are situated in
an intertidal bay at the mouth of an estuary called l’Aber
Wrac’h. the oysters are grown during a minimum of 3
years in this same bay, and are bathed in very pure and
renewed ocean water.

Oyster farmers from father to son since five generations,
we are producing fresh oysters in two of the most
famous areas in brittany (France): the gulf of morbihan
and the bay of quiberon.
Among our various oyster farming technics, the most
noticeable one, the deep sea farming, is still practised
by only few of the professional today.
this very special farming technique in made in offshore
waters where the oysters will grow at the bottom of the
sea in a wild environment for several years before being
harvested.
this technique, that we practise both for the cupped
oysters and the flat oyster, the famous belon, will deliver
a unique flavour of wild oyster, remarkable among all
others.
