This authentic Fried chicken is a delicious and tempting appetiser recipe, which is prepared with chicken , dipped in buttermilk and coated with flour and spices. Then fry in oil until the chicken turns crispy.

Fried Chicken Ingredients
Chicken
take 1 Kg chicken, you can take drumsticks, legs and thighs.
Buttermilk
Acidic buttermilk tenderise the chicken without making it too tough. It also helps the flour mixture to stick to the chicken.
Flour
All purpose flour crispy crust to chicken
Seasonings
You can add more spices and seasonings to taste
Oil
vegetable oil is perfect for frying chicken because it has a high boiling point.
Ingredients
1 kg chicken, cut into pieces
1 cup buttermilk
1 1/2 cup flour
1/2 tbsp paprika
2 tsp garlic powder
salt and pepper to taste
oil for frying
How To Make Fried Chicken
Step 1: Brine and marinate the chicken
In a glass bowl add buttermilk and seasoning ( 1/4 tbsp paprika, 1 tsp garlic powder, salt and pepper to taste. Place chicken pieces in the marinate,use a clean wrap to cover the bowl and it sits for at least 40-45 minutes. The longer the marinates, the more flavourful it will be.
Step 2: Coating the chicken
In a glass bowl add flour and remaining seasoning and mix it well. Take one piece at a time and coat it in the flour mixture and again put it in marinate and repeat this process for 3 times.
Note: If you like your crust crispy and rugged, we recommend adding 2 tbs of cornflour to the flour mix.
Keep it aside for a few minutes. Make sure the chicken is coate completely with flour.
Step 3: heat the oil and Deep fry
Heat vegetable oil on a high flame. Add coated chicken pieces in the pan and deep fry over a high flame. When chicken turns brown in colour, cover the pan with lid and reduce the heat. Cook the chicken on medium to low flame, until they are crispy. Once crispy, put them on absorbent paper and drain off the extra oil from fried chicken. Serve hot

13. Coat the chicken pieces with vegetable
oil and sprinkle salt over them on all
sides. Prepare your grill for high, direct
heat. If you are using charcoal or
wood, make sure there is a cool side
to the grill where there are fewer
coals.
14. Lay the chicken pieces skin side down on
the hottest side of the grill in order to
sear the skin side well. Grill for 5-10
minutes, depending on how hot the grill
is (you do not want the chicken to burn).
Once you have a good sear on one side,
move the chicken pieces to the cooler
side of the grill, or, if you are using a gas
grill, lower the heat to medium low.
Cover the grill and cook undisturbed for
20-30 minutes.
15. Turn the chicken pieces over and
baste them with your favorite
barbecue sauce. Cover the grill
again and allow to cook for another
30 minutes. Repeat, turning the
chicken pieces over, basting them
with sauce, covering, and cooking
for another 30 minutes.
16. By now the chicken should be cooked
through. You can check with a meat
thermometer inserted into the thickest part
of the chicken piece. Look for 165°F for
breasts and 170°F for thighs. Or insert the tip
of a knife into the middle of the thickest
piece, the juices should run clear. If the
chicken isn't done, turn the pieces over and
continue to cook at a low temperature. If you
want can finish with a sear on the hot side of
the grill. To do this, put the pieces, skin side
down, on the hot side of the grill. Allow them
to sear and blacken slightly for a minute or
two.
