Fried chicken is definitely a delicious dish! Here's a simple recipe for you to try:
Ingredients:
● 2 lbs chicken drumsticks or thighs
● 1 cup all-purpose flour
● 1 tbsp paprika
● 1 tbsp garlic powder
● 1 tbsp onion powder
● 1 tsp salt
● 1 tsp black pepper
● 1/2 tsp cayenne pepper (optional)
● 1 cup buttermilk
● Vegetable oil, for frying
Instructions:
1. In a large bowl, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and
cayenne pepper .
2. Pour the buttermilk into another large bowl.
3. Dip each piece of chicken into the buttermilk, then coat it in the flour mixture. Shake off any excess flour.
4. Heat a large skillet over medium-high heat and add enough vegetable oil to come up about 1 inch in the
pan.
5. Once the oil is hot, carefully add the chicken to the skillet, skin-side down.
6. Cook the chicken for about 8-10 minutes per side, until golden brown and cooked through.
7. Remove the chicken from the skillet and place it on a wire rack to cool slightly and drain any excess oil.

spices which gives it a unique flavour. In this article, we will share the step-by-step recipe of making Chicken
Resala at home.

For the Chicken Marinade:
● 500g chicken, bone-in and skinless
● 2 tbsp ginger paste
● 2 tbsp garlic paste
● 1 tbsp lemon juice
● 1 tbsp salt
For Gravy:
● 2 tbsp ghee (butter)
● 2 tablespoons of vegetable oil
● 2 medium sized onions, chopped
● 1 tbsp ginger paste
● 1 tbsp garlic paste
● 1 cup curd
● 1 cup cream
● 2-3 green cardamom pods
● 2-3 cloves
● 1 bay leaf
● 1 cinnamon stick
● 1 tsp sugar
● salt to taste
Instruction:
Step 1: Marinate the Chicken
In a large mixing bowl, add chicken pieces, ginger paste, garlic paste, lemon juice and salt. Mix everything until
the chicken is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for
best results.
Step 2: Cook the Chicken
Heat a large skillet over medium heat and add ghee and vegetable oil. As soon as the oil is hot, put the marinated
chicken pieces in it and cook for 5-7 minutes till it turns golden brown. Remove the chicken from the pan and
keep it aside.
Step 3: Prepare the Gravy
In the same pan, add chopped onions and cook till golden brown. Add ginger paste and garlic paste and fry for
2-3 minutes till the raw smell goes away. Add green cardamom pods, cloves, bay leaves, cinnamon stick, sugar
and salt. Mix all the ingredients together and cook for another 2-3 minutes.
Step 4: Add Curd and Cream
Add curd and cream to the pan and mix everything together. Lower the flame and let the gravy cook for 5-7
minutes till it thickens.
Step 5: Add Chicken
Add the cooked chicken to the wok and mix everything together until the chicken is well coated with the gravy.
Cover the pan with a lid and let it cook for 5-7 minutes till the chicken is fully cooked.
Step 6: Serve
Once the chicken is cooked, take the pan off the heat and let it cool for a few minutes. Serve Chicken Rezala hot
with rice, naan, or any Indian bread of your choice.
tips and tricks:
1. If you do not have ghee, you can use butter instead.
2. You can add more cream to make the gravy more creamy.
3. You can increase or decrease the quantity of spices as per your choice.
4. Make sure to marinate the chicken for at least 2 hours to get the best flavour.
5. You can also use boneless chicken for this recipe.
