This document provides an introduction to food safety. It defines food safety and explains that it is the handling, preparation, and storage of food to prevent foodborne illness. Foodborne disease is a major problem worldwide and can cause human suffering and economic losses. Food safety aims to control hazards like chemical, physical and microbiological contaminants at all stages from farm to table. Maintaining proper food hygiene practices according to WHO guidelines such as prevention of cross-contamination and proper cooking and storage temperatures is important to ensure food safety.
