Sarah "The Cheese Lady" Kaufmann is an artist from Wisconsin who creates environmentally friendly sculptures out of cheese. She has been sculpting cheese for 16 years and manages a dairy farm. Her inspiration comes from growing up surrounded by dairy farms in Wisconsin. She sculpts cheese to educate people about cheese varieties and flavors. Her process involves carving blocks of cheese using basic tools in a temperature controlled room and leaving the sculptures to harden.
