Cretan gruyere is characterized as a very pale yellow, hard cheese
with asymmetric holes and natural crust. It has a particularly

3. Dittany
Dittany is a small aromatic shrub that grows on the
island of Crete. It is used for flavoring food, for
medicinal purposes and as an ornamental plant. It has
around its green leaves a velvety texture and tiny pink
flowers. It is also used for wound healing, as a
sedative of the digestive system and as an antiseptic.
4. • The Cretan rusks are usually made from barley,
wheat or rye flour . They have been honored with
the distinction of Protected Designation of Origin.
• The barley rusks contain vitamin B, the main folic
acid and vitamin B6 , fibers , antioxidants , silica (it
helps regenerate and protect our bones ) , chromium
( adequate intake is associated with better glucose
control for diabetic ), amino acids , magnesium and
phosphorus.
