2. INTRODUCTION
With the sole intention of supplementing the income of zealous farmers a great idea of dairy farming
was put forth in the minds of enthusiastic team. This resulted in the birth of the Warana Dairy, in
1968. This white revolution has spread to all other 78 surrounding villages and added revenue of Rs.
150 crores per annum.
The dairy plant has a capacity to handle more than 300, 000 litres of milk of which 100, 000 litres
can be converted into milk products. A clean and efficient management of dairy brought the proud
products of Warana like Warana pasteurized Milk, Milk Powder, Ghee, Butter, Shrikhand,
Amrakhand, Lassi, Cheese, and Strawberry Desert etc. These products once tasted chase the taster.
The dairy has made its strides all the way.
The turnover for the year 1997-98 was Rs. 138 crores. By selling 2035 tones of Shrikhand in the year
1998, Warana reached a new record of maximum selling of Shrikhand in India. For its qualitative and
quantitative excellent performance dairy has acquired an ISO 9002 Certification in record time of
three months.

3. HISTORY
SHREE WARANA SAHAKARI (JTPADAK PRAKRIYA SANGH LIMITED, KORENAGAR was
established in the year 1968 by Late Shri.Tatyasaheb Kore with the financial assistance provided by
Shareholders and State Government. The object of establishing this dairy was to improve the milk
producer's economical, social and educational leave and to provide the employment.
This scheme has provided the ready market to the milk producers for sale of mild in the villages
through co-operative and on the other hand it provides wholesome, hygienic, good quality, processed
milk and milk products to the urban customers at remunerative prices. Since the establishment it is
continuously progressing.
It has been certified by ISO 9002 and HACCP certification. The milk is procured from about 5
tehsils, which are in milk-shed area. At present nearly 763 societies are functioning from 389
villages. The Warana sangh has an elected board of Directors. The plant was expanded in the year
1975; Warana dairy has five chilling centers at Ganeshwadi, Gandhinglaj, Jath, Mudhol, Solapur, and
milk packaging centers at Washi, Gadhinglaj, Mudhol, and Solhapur.
Warana Sangh is popular due to "Shrikhand". In addition to this Butter, Ghee, Table Butter, Lassi,
Dahi, Paneer, Cheese, SCM, Milk Powders (SMRWMPJDairy Whitner), Tetra Pack Milk and
Flavored Milk are also manufactured here. This dairy is marketing the products under the brand name
'Warana’ has established good impression through out the Maharashtra. It has become benchmark for
the products in other milk plant.
The 'Warana Dairy', one of the successful' co-operative dairy, was established in with the noble
purpose of providing an additional source of income to the farmers from the surrounding villages.
This revolutionary movement has crossed the turnover of Rs. 400 crores per annum.
In addition to this, Warana Dairy houses a plant of milk processing with the capacity of 10 lakh litres
per day. It is one of the most hygienic plants. Along with Warana Shrikhand an indigenous Indian
sweet,' Warana Milk Powder, UHT Milk in Tetra Pak, Produced in a quantity of 65 metric tonnes per
day, it is exported to gulf nations like Kuwait, Saudi Arabia and Sharjah, African Countries,
Bangladesh, China. Warana Shrikhand has set a record of highest selling in India.
It's also one of the most popular products in Maharashtra. All this stands as a solid proof of the
Warana's quality. Soon, these products will be exported to European countries, US, UK, Russia,
South Africa and Bahrain. The dairy produces various Milk & Milk products like UHT Tetra Pak
Milk, Pasteurized Milk, Milk Powder, Shrikhand, Ghee, Butter, Cheese, Paneer, Chhass, Dahi,
Lassi and many more.
The Warana Dairy is now all set to enter the European market with its wide range of quality
products.

4. PRODUCTION PROCESS
The process on raw milk reception dock (RMRD) starts
from unloading the Vehicles. The cans are conveyed on
Hook chain conveyer.
On the way to tilting point auto lid opener opens can lids
organoleptic tests are conducted. If anything wrong with
can then it is detected and sue can is taken out from
conveyor. Then O.K. cans are unloaded / emptied in dump
tan^ manually at tilting point.
The cow and buffalo milk are collected separately on
RMRD. The suspected / sour milk is not allowed d to
mix with good /fresh milk. It is diverted from that line
and conveyed to sour milk dump tank.
A lab person or chemical analyses the sample for platform
tests such as Fat, ClR, COB, temperature, etc. machine tests
are carried out in separate laboratory chamber
Sampling is done automatically by auto pneumatic
sampler. Sample from each lot (Tilting tank) is taken
in bottles and carried to the milk testing chamber on
a sample bottle conveyor.
The cans, which are not properly cleaned, are taken to
can scrubber and again loaded to can washer for re-
cleaning.

5. TANKER RECEPTION
The milk from the chilling centers located at Ganeshwadi, Gandhinglaj, Jath, Mudhol, Solapur
etc. is transported by road Milk tankers.
As soon as the tanker arrives at the dock containing processed or chilled milk it is being tested
for organoleptic tests and lab tests. After analyzing its quality, O.K. Quality Milk is accepted
for further processing and production.
The milk handling capacity of Warana is around 7 lakh lit / day
RMRD at Warana dairy is well equipped with the advanced equipment has computerized and
pneumatic auto sampler, milk testing machines, electronic weighing system. There is spacious
area in front of the dock to park the vehicles. The dock having two ran reception lines, so has
two units of each equipment like can opener; weights tank Dump Tank, Strait through can
washer.
Processing section is the heart of Dairy industry. The milk received from the RMRD cannot
be instantly processed. So it is first chilled and stored in silo tanks. Consequently processing is
carried out in this section are chilling, storage, pasteurization, cream separation, filtration,
clarification, homogenization, standardization, reconstitution and bactofugation.
The equipment's in this section are PHE Chillers, Vertical Silos, Storage Tanks, HTST
Pasteurizers, Duplex filters, Self Cleaning Clarifier cum Separators and Bactofuge.

6. PRODUCTS OF WARANA
• Lassi: "Warana lassi" The all season drinks its most popular drink from warana.
• Shrikhand: WARANA is the largest manufacturer & seller of shrikhand in four
flavors Badam Pista, keshar, mango & Elachi.
• Ghee: Ghee is a quality product from warana available in different packing sizes.
• Cheese: Mozzarella cheese, processed cheese, pistta.
• Milk: Milk & milk products from India like milk powder, cheese, paneer, ghee, butter,
and lassi
• Fruit: - Exporter of fruit pulp/puree like mango, guava, banana etc. Mango: -
Alphonso mango pulp, Totapuri mango in 215kg drum pack & 3.1 k, 850gm tin pack.
Pulp: - Warana sales mango pulp, banana pulp, guava pulp.
• Baby Food: - Warana exports baby food (Infant formula) Banana: - Banana
puree/pulp. Guava: - We export white guava pulp/puree. Jam: - Warana mixed and
most delicious fruit jam.
• Puree: - Warana offers Alphonso mango puree, Totapuri mango puree, Banana puree,
White guava puree in natural flavour.
• Cream: - Skimmed milk powder, full cream milk powder, 0%, 26% fat quality
products from Warana.
• Malted: - Malted milk food, we are planning to manufacture products like stamina etc.
• Curd: - Warana co-operative milk union products. Curd, butter, cheese, milk powder,
lassi, shrikhand, paneer etc.
• Butter: - Salted butter, white butter & yellow butter. Paneer: Malai Paneer is our
favourite paneer product

CONCLUSION
Mr.Mahajan, our instructor explained us in systematic and proper way, how raw
material is converted into finished products. He showed the way how the product is packed,
stored and supplied to major cities such as Sangli, Kolhapur, Nasik and major distribution is
done in Mumbai.
Warana Dairy, as most of the cooperative bodies in Maharashtra has been established
with sole aim of economic & social development of farmers and milk producers. Warana is a
boon for the villagers of more than 500 villages. Warana Sang has also diversified into various
other fields like textile & education. With at most care taken of the workers through modern and
updated mechanism, the working community thrives onto the success of the Warana Milk dairy.
Warana milk products have become a symbol of pride amongst not just Maharashtra
people, but for the whole nation! The export returns have made it possible to maintain the price
level as well as quality standards in the whole milk processing process.
With rapid increase of turnover, the social and economical state of the villagers has got a
boost.
