Cavite province in the Philippines played an important role in the global culinary history due to its strategic location for trade routes during the Spanish Galleon Trade period. Food influences from Europe, China and other parts of Asia were introduced to Cavite during this era. Traditional dishes from Cavite like bibingka, pancit, and dishes featuring ingredients like fish, rice and coconut developed and reflect the blending of different food cultures in the region as a result of its role in international trade over 500 years ago. Efforts are ongoing to document and preserve the culinary heritage and heirloom dishes unique to Cavite.
