1. Mathulam Payasam
Ingredients
200 ml Pomegranate juice
60 gms Pomegranate seeds
1 litre milk
200 gms Sugar
15 gms split cashewnuts
15 gms raisins
15 gms ghee
Method:
Remove the pomegranate outer skin, take off the seeds, keep 60 gmsfor
garnishing, make juice with the remaining to the level of 1 cup. Keep it aside.
In a double boiler reduce milk, add sugar, and coolaside.
Fry raisinsand cashewnutsin ghee, add pomegranate juice and seedsto the
reduced milk and sugar.
Serve Chilled.
