Murungakkai Thovayal is a South Indian drumstick curry made with drumsticks, mustard seeds, urad dal, Bengal gram dal, grated coconut, tamarind, red chillies, curry leaves, and asafoetida. The drumsticks are boiled, flesh scraped and set aside. Mustard seeds, lentils, chillies and asafoetida are toasted in oil. A paste is made from grated coconut, drumstick flesh and tamarind and added to the toasted mixture to make the curry.
