1. Channa Masala
Ingredients
1 cup Garbanzo Beans or kabuli Channa , soaked overnight
50 ml Refined cooking oil
1 Bay leaf
3 gms Cinnamon stick
5 gms Cumin seeds
100 gms Onion, finely chopped
10 gms Ginger-Garlic paste
100 gms Ripe Tomatoes, finely chopped
5 gms Kashmiri chili powder or Paprika Powder
A Pinch of Turmeric powder
5 gms Coriander powder
3 gms Cumin powder
A Pinch Aamchur powder or Dry Mango powder
Salt to taste
3 gms Garam masala
Water as per requirement
25 gms Fresh Coriander leaves, finely chopped
Procedure
In a Cooker Cook the overnight soaked Garbanzo Bean or kabuli channa until soft
and done.

2. In a pan Add Oil ,saute bay leaf, cinnamon stick and cumin seeds till they turn
aromatic, also add finely chopped onions and ginger-garlic paste. saute till it turns
golden brown,add tomatoes and saute till they start releasing oil.
Further, add chilli powder, turmeric, coriander powder, cumin powder, aamchur
powder, garam masala and salt. saute for a minute.
You can even blend the above or use it as such.
Keep mixing, and check the seasonings. make sure the masala water to be slightly
salty as the Garbazo beans or Kabuli Channa will absorb while cooking.
Simmer until the raw flavor is gone .
Garnish withChopped fresh Coriander leaves.
Serve hot with Poori /Chapathi / Bhatura or Pulao.
