2. Heat the oven to 200 ºC. Grease and flour 6 molds from muffins.
Melt the butter in a pan over high heat and remove the bacon cubes until golden
brown, about 5-6 minutes. Roll out the puff pastry and, with the help of a
coppapasta or bowl, cut out 6 discs of dough diameter of about 8 cm.
Line the molds with the dough discs that should cover just the bottom of the mold
with a little edge.
Place a fig tree in the center of the puff pastry of each mold and carve them,
cutting them into a cross on the side of the stalk, opening them to star. Fill each fig
with sautéed bacon cubes, a tablespoon of cheese and a sprig of rosemary. Bake
for 15 minutes at 200 C.
Bacon and figs tartlets
3. Render the bacon until crispy (about 8 minutes). Stir in the leeks, onions, celery,
and carrots. Sauté for about 2 minutes or until the vegetables begin to wilt.
Season the vegetables with salt and pepper. Add the bay leaves and thyme. Stir in
the flour and cook for 2 minutes.
Add the potatoes. Stir in the clam juice. Bring the liquid up to a boil and reduce to
a simmer. Simmer the mixture until the potatoes are fork tender (about 12
minutes). Add the clams and simmer for 2 minutes. Stir in the parsley. Season with
salt and pepper, if needed.
Ladle into shallow bowls and serve.

The preparation of the pieces for frying consists in flour or breading, possibly as a

Spices such as salt, pepper, cayenne pepper, paprika, garlic or onion powder or
ranch sauce can be mixed with flour. Part of the fats freed from cooking are
absorbed by the coating of flour and breading thus creating a tasty crust.

5. The cheesecake is a cold cake consisting of a biscuit dough base on which rests a
high layer of cream cheese, sweetened and treated with other ingredients.
The base is usually made of crumbled biscuits and then re-pasted with the
addition of egg yolk or butter, or moistened biscuits of coffee, syrup or liqueur or
can be made of sponge cake or pastry.
To prepare the cream are used very soft fresh cheeses, spreadable cheeses (such
as mascarpone and Philadelphia), or even, for its consistency, ricotta.

fruit, jam or chocolate on the top of the cake.
