welcomes in the restaurant. They have ability to spot potential problems and are driven by solutions – a real ´can
do´attitude. The long term potential to become Manager. They will be introduced to basics of ordering, rotas, stock takes,
and may take on specific tasks. Top notch banking and cash management skills, and not afraid to ask for help.
Ability to manage a great shift. Extraordinary empathy with people working and eating in the restaurant. Works
together with manager to nurture and ‘grow’ their term team members e.g. cross training, testing and graduating team
members to ambassadors. He/she does not feel the need to please everyone all the time.
Responsibilities:
Operational:
1 To maintain food and service quality and consistency in line with Leon standards.
2 To upholds standards of quality, presentation and cleaning throughout the restaurant.
3 To ensure that the business is effectively managed and staffed at all times.
4 To ensure that all equipment is used correctly, in compliance with all Hygiene & Safety regulations.
5 To look after the people that eats & drinks with us.
Financial:
1 To optimise profitability though increased sales and controlled margins, whist maintaining Leon standards.
2 To deliver budgeted sales and EBITDA.
3 To report accurate purchase and wage costs on a weekly basis.
4 To ensure that all daily, weekly and period paperwork is completed as per manual.
5 To keep controllable costs in line with budget.
6 Any overspend on controllable to be authorised by Manager before going ahead with works.
7 Keep a maintenance log.
People:
1 To ensure all team members receive regular and prompt induction & training, in compliance with Leon
standards and where applicable, by law.
2 To motivate team members, and perform daily team brief and part take in weekly management meetings and
run them, when Manager is absent.
3 To operate an ongoing succession plan for the restaurant. (Happy Strong)
4 To maintain discipline and take appropriate action, where necessary, in accordance with the Leon Family rules.
Assets:
1 To ensure that the restaurant complies with all legislation regarding Health & Safety, Food Hygiene and
Licensing.
2 To ensure the security of the premises, cash and stock.
3 To complete a full stock take every week.
4 To monitor maintenance of premises and equipment on a regular basis, and report recommended action to the
Manager.
5 To ensure the standards in your restaurant are constantly monitored and the restaurant looks clean and
presentable at all times.
