PROFILE
I have a lifetime of experience in hospitality and customer service. I am a leader, teacher, problem solver,
mediator, & motivator. And...I insist on having fun, and would like to apply these attributes to a new challenge in
life. Outside of these professional endeavors, I also teach acting, speech, direct theatre, as well as volunteering
with organizations that help people recover from alcohol and drug addiction.
EXPERIENCE
DIRECTOR OF FOOD & BEVERAGE OPERATIONS - SUNSET HILLS COUNTRY CLUB - 5/2014-2/2015
$75K Annual - with bonuses
Brought in, as a temporary hire, to improve customer satisfaction with customer service and food quality and to
bring inventory & labor costs in line with company standards in a multi-unit, private country club with 800 very
selective members. Within 90 days, dining room revenue increased 35% over LY and 40% over plan and food &
liquor costs were running 30% & 25%, respectively, against goals of 35% & 30%. This was achieved with leading
by example. My knowledge of culinary arts, menu development, and high service standards was seen, in action,
and helped instill a strong sense of pride among the staff that was recognized by the members & management. I
was offered the position, permanently, and turned it down to accept a full-time teaching position.
ASSISTANT STORE MANAGER - BARNES & NOBLE BOOKSELLERS - 2002-2013
Hourly - $25.05 - $63K Annual
Responsible for all aspects of daily operation of a multi-million dollar specialty retail store. Ordering,
merchandising, scheduling, workload planning, inventory control, hiring and training, loss prevention, and driving
sales. Balancing all this with the ability to motivate my staff to achieve constantly shifting goals, on a daily basis,
in an ever changing business, while never losing focus of the two things I feel are most important - customer
service & employee morale. I traveled around the district to train & develop new department managers on visual
merchandising and new assistant managers on how to be the most effective MOD’s.
BAR MANAGER - WOLFGANG PUCK’S GRANITA, MALIBU - 2001-2002
Fine dining, American-fusion. Chef Jennifer Naylor. Very high profile clientele that expected a certain level of
customer service, professionalism, skill, & knowledge. While satisfying these customer’s needs I also handled
ordering, scheduling, cost control, and cultivated an award-winning wine list. Then, Wolfgang decided to close
the restaurant to focus on other ventures. After 15 years in the business, I took it as a sign that it was time to try
something new.
BAR MANAGER - PRIZZI’S PIAZZA, HOLLYWOOD - 1999-2001
Casual Italian. Extensive wine list. I was hired based on my fine dining experience and background in bar design
to help with the transition from a beer & wine license to full liquor license. Based upon the success of that
transition I was offered a job by the GM of Granita in Malibu.
HEAD WAITER/BARTENDER - CIBO RESTAURANT, NYC - 1996-1999
Fine dining, Tuscan-American. Chef Tyler Florence. Worked in all aspects of the business here - front of house
and back of house. Handled all the ordering and inventory control for the bar and served as wine steward along
with head waiter duties, i.e. training and developing new staff. Also coordinated all our off-site catering events
and holiday parties. Very tight-knit family environment. if I still lived in NY, I’d probably still be working there.
