This document presents three food safety dilemmas:
1) A cream left out of the fridge is used to make a birthday cake, making some guests sick.
2) A cutting board used for raw chicken is quickly rinsed instead of properly washed before another class uses it, potentially contaminating food.
3) A dropped sausage roll is given to a customer instead of being thrown out, with the customer finding dirt and complaining.
2. You are helping your friend make party food for her
birthday. You get the fresh cream out of the fridge for the
birthday cake but are distracted when your friend asks you
to help put up decorations.
You come back to the kitchen several hours later to find the
bottle of cream still sitting on the bench. It doesn’t feel cool
anymore. You guess the temperature of the cream is
greater than 50 C. You look in the fridge for more cream but
there isn’t any.

Some of the party guests have a taste of the cake, but then
don’t eat the rest, as they think it tastes ‘funny’. A few
guests eat it anyway, but later that evening they feel very
sick in the stomach and have to go home.
Your friend, whose birthday it is, is really upset that some
of her guests got sick and had to go home and some didn’t
seem to like her birthday cake.
She feels like her party is ruined.

4. You decided to throw out the cream
You threw out the cream that had been sitting in the
temperature danger zone for too long.
When you told your friend she said, “That’s ok. I don’t
want anyone getting sick. We have some icing sugar to
make vanilla icing instead. The cake will still look great!”
All the guests thought the cake tasted fantastic and
everyone had a good time at the party.

5. You are running out of time at the end of food studies. You
don’t want to be late for your next class, as Mrs Rivers, your
Geography teacher is a stickler for being on time.
In today’s food studies you made chicken stir fry. You still
need to wash up the cutting board that you used to cut the
raw chicken on. But, you feel like you don’t have time to fill
the sink with hot soapy water, scrub and dry the cutting
board properly……
Oh no! What do you do?

You decide to wash and dry the cutting board
and dishes properly

6. You decided to wash and dry the cutting board properly.
Mr Masterchef, your food studies teacher, sees you are
staying behind to scrub and dry the cutting board and
dishes.
He asks you if you would like a late pass for your next
lesson. You reply, “Yes please”, thinking to yourself, “Phew,
at least I won’t get detention from Mrs Rivers for being late
again”.
As you finish up Mr Masterchef thanks you for doing the
right thing and you feel pretty good as you walk out the
door.

7. You decided not to wash and dry the chopping board
properly.
The next food studies class is making fruit salad. Your friends little
sister, Lilli, is in that class. She takes out the same cuttingboard
that you had been cuttingraw chicken on and then didn’t clean
properly, leaving in contaminated with bacteria.
The cutting board looks fineto Lilli. She loves fruit salad and starts
chopping away merrily, eating a big serve once it is ready.
The next day your friend tells you her little sister has food
poisoning and has to spend a night in hospital.
They are very worried.

8. You are helping out at the tuckshop at the Saturday
afternoon footy game. You have a sprained ankle from last
week’s game and the tuckshop needed extra help, so you
jumped in.
A customer has ordered a sausage roll. But as you pick up
the last sausage roll in the hot box you accidentally drop it
on the floor.
Oh no! What do you do?
OR
You decide to pick up the sausage roll before
anyone sees and give it to the waiting
customer, as you don’t want to get in trouble

You decide to tell the tuckshop manager
that you accidentally dropped the

9. You decide to give the customer the dropped sausage roll.
The customer thanks you and walks off only to return a
couple of minutes later to complain to the manager that the
sausage roll had dirt and hair on it.
Overhearing the conversation, you realise the dirt and hair
must have been on the floor where you dropped the
sausage roll.
The customer is angry and says they will be taking their
complaint to the head of the football club. The tuckshop
manger is horrified, apologises and gives the customer their
money back.
You feel pretty bad.

10. You decide to tell the tuckshop manager you dropped the
sausage roll
The tuckshop manager says, “That’s good you told me.
Accidents happen. The last thing we want is for a customer
to get sick or complain that our food was unsanitary. It
could really damage the footy club’s reputation. I have
more sausage rolls in the cool room ready to heat”.
You let the customer know that their sausage roll will take
only a couple of minutes to heat up. They are happy to
wait for a fresh one.
