FOREWORD
Kata Pengantar
"
Indonesia Food Innovation (IFI) 2021 is an acceleration program for the Small and
Medium Food Industries (SMI) which have been chosen from the selected innovative
food products that are produced using local resources as the ingredients. It is our
intention to create the Indonesia’s small and medium food industries become marketable,
profitable, and sustainable.
This catalog covers IFI 2021 participants who have passed the selection stage which is consist of 9 intermediate products of SMI and
31 end products of SMI. The IFI 2021 participants receive coaching and mentoring from professional experts through Food Camp to
improve the capabilities, both from practical and business aspects, being prepared to become modern food industry.
Food and beverage industrial sector have important role as contributor for Indonesia economy . On the first quarter of 2021, this
industry contributed already 6.80% of the total PDB which is equivalent to the 9.69% export value of the national total export.
Furthermore, during heavy burden of the covid - 19 pandemic period, this sector is able to create 2.45% positive growth on the first
quarter of 2021. This is also mean a full recognition to the small and medium- sized food industry, which already reach the amount of
1.68 million business units or the 38.27 of the total small and medium –sized industry business units.
Through IFI 2021, the Directorate General of Small, Medium and Multifarious Industries facilitates the development of SMI by providing
sustainable guidance. IFI 2021 is expected to accelerate the scale-up of SMI food businesses and to develop the innovation.
With gratitude, the IFI 2021 program can be carried out well with all parties support and cooperation. We are delighted and proud to
say that IFI 2021 participants can collaborate with relevant stakeholders, such as investors, financial institutions, potential buyers, and
other parties, and become an independent, modern, and innovative food industry.

ABOUT INDONESIA FOOD INNOVATION
Tentang Indonesia Food Innovation
The Indonesia Food Innovation (IFI) program is a business acceleration program for selected SMI’s food that have product
innovations and use local resources as their primary raw material to create a food industry that ready to be marketable,
profitable, and sustainable.
Scope of innovation in the Indonesia Food Innovation (IFI) Program is all the activities that result in increased or a renewal
of the product’s benefits and the result of the production..

inovasi produk dan/ atau proses dan berbahan baku utama sumber daya lokal agar siap menjadi industri pangan yang

Testimoni
IFI was designed to deliver food business entrepreneurs and also innovative product which
able to substitute imported products and penetrate export market. The demand on high
quality food products continue increasing consistently, there for sustainable business that
support with innovative product is highly required.
Indonesia Food Innovation 2021 has been successfully done because all of the participants
responding greatly to all given activities throughout the program particularly during food camp. The
participant’s feedbacks are amusing as also every product and the drafted business-plans. I truly believe that
most of them could be accelerated to increase the participants’ business scale.
Moreover, I hope in the next IFI program, we will have more intermediate product participants. The Ministry of Industry of
Republic of Indonesia was successfully running the IFI program, as shown by the growth of the participants – from the points
of: business maturity, bigger turnover and more clear business planned. I truly hope that the Ministry of Industry already has
the picture of the Indonesian’s food sources supply and demand, whether its nationally or internationally, to mobilize more
effectively the bigger market. In addition, I kindly ask the Ministry of Industry to continually foster the entrepreneur within a
kind of food business strategy by making the IFI participants as partners to execute and implement that big strategy.

Congratulation to the Ministry of Industry for the success of the Indonesia Food Innovation
(IFI) 2021 program. I saw an increasing quality from this year’s participants, especially from the
side of the entrepreneurship spirit and more varied products. I hope there will be more of the
food’s Small and Medium sized Industry that were inspired to join the IFI program so they would
receive the coaching on the how-to increase the quality. I believe the Ministry of Industry can guide
the exploration of these innovated products from the Indonesian small and medium sized industry in
terms of its potential raw materials, its production process and its human resources, to make these innovated products reach

with product innovation, packaging, and business development plan when they are developing
their products. This is truly the young Indonesian entrepreneur in developing the processed

all IFI 2021 participants, which come from more than 1600 registered, 40 participants selected
and finally 20 chosen as the best, can be the preferred forerunner of the development of the

lacklabel start its journey on 2015 in a humble
home kitchen.
Currently there are only 2 noticeable flour texture that
existed in the Market, Powder texture and Crumble
textures. Powder Texture can be found in almost majority
of multipurpose flour and Crumble textures usually found
on bread crumb - Blacklabel came up with a new texture
of flour, a Granulated Flour.
Tepung Crispy ala Taiwan Blacklabel is actually a
seasoning coated flour, used for deep fried food.
I.e : Boneless crispy chicken, Crispy Squid, and aplicable
on most other fried food.
This Granulated Flour give an unique texture on the
finished end product, and a new eating experience.
On the healthy side awareness, Blacklabel flour has been
designed to not absorb much oil while frying and keeps
the cooking oil more clean compared to the Powder
based and Crumble based flour.
Tepung Crispy ala Taiwan Blacklabel had been certified
by BPOM to ensure only the highest quality of product

ULAPASTA was initially created to answer the
problem of parents who have children with
indigestion problems and picky eaters.
LULAPASTA is gluten free pasta products made from
local flour, especially mocaf flour, which is derived from
fermented cassava, so that it has similar characteristics
to wheat flour. Furthermore, LULAPASTA is made from
natural ingredients without preservatives and artificial
colors. LULAPASTA comes with attractive colors, which
are from vegetables as natural dye, so that it is fiber-rich
and beneficial for digestion.
LULAPASTA products are processed using extrusion
machine and bronze dies technology so that it produces
pasta with a unique chewy texture and makes spices
absorbed well into the pasta. In addition, the drying
process does not go through the frying process but uses a
low temperature dehydrator instead in order to maintain
natural colors and produce healthier products.
Currently, LULAPASTA comes in a wide variety of ready-
to-cook pasta forms such as Spaghetti, Fettuccine,

osteak was born from our love of steak. The
founder is a psychology therapist adn has studied
how to cooking steak in Canada and co-founder
is a medical doctor, who concerned about production
of healthy and nutritious food. Our focus is to provide
consumers with the best benefit from beef steak.
Unfortunately, it is challenging to find steak made from
local spices and tender local meat in Indonesia. This
motivates us to take advantege from the reaserch and
development result that have been routinely carried out,

The Role Of Increase ‘Pempek Hitam’s Economic Values To
Support Local Fisher Empowerment Near Musi River Coastal.

ne of the varieties from Pempek Syamil product is
Pempek Hitam that made from freshwater fishes.
It is using a concept of local fishers and women's
empowerment near Musi river coastal. Pempek Hitam is made
from Lampam Fish (Barbonymus schwanenfeldii) that rarely
consume in local communities. Lampam fish is rarely popular
because of its small size and difficulty to clean up. Moreover,
Lampam fish has a lot of small fishbones in it. However,
according to research, Lampam fish’s bone has high calcium
and protein nutrients that good for pregnant mothers and
children in their growth period.
Pempek Syamil gets fish supply from local fishers that use
conventional fishing method to protect the river’s ecosystem
and environment in the future. We are using fish grinding
method, known as “Kuningan” grinded by local women near
Musi river coastal, that do not require fish grinding machine as
usual.
Pempek Syamil hopes this Pempek Hitam can contribute to
increasing Lampam fish’s economic values that tend to be
thrown away become tasty and worthy products. As a rethis
product, Pempek Hitam, can be consumed by not only the
Palembang community but also all around the country and
overseas.

Candied salak Sarisa Merapi is processed using
selected raw materials of salak pondoh with a maximum
fruit maturity of 70%, which is a typical Sleman fruit.
These sweets is a specialty of Sleman, made from local
raw materials, the rest of the pieces of salak are made of
salak lunkhead, salak juice, and bark flour, while the seeds
and skin are made into compost to fertilize the plants.
This candied salak is produced to increase the low selling
value of salak, which makes salak farmers lose money,
