2. DIRECTIONS
1.In a medium bowl, cream together the butter, white sugar and
confectioners' sugar until light and fluffy. Mix in the lavender, mint
and lemon zest. Combine the flour, cornstarch and salt; mix into
the batter until well blended. Divide dough into two balls, wrap in
plastic wrap and flatten to about 1inch thick. Refrigerate until firm,
about 1hour.
2.Preheat the oven to 325 degrees F (165 degrees C). On a lightly
floured surface, roll the dough out to 1/4 inch thickness. Cut into
shapes with cookie cutters. Cookie stamps will work well on these
too. Place on cookie sheets.
3.Bake for 18 to 20 minutes in the preheated oven, just until cookies
begin to brown at the edges. Cool for a few minutes on the baking
sheets then transfer to wire racks to cool completely.

DIRECTIONS
1.In a medium bowl, stir together the shortening and cream cheese
until well blended. Stir in the flour, you may need to use your
hands to help it form a dough. If the mixture seems too dry, add a
couple of teaspoons of water. Cover and chill several hours or
overnight.
2.Preheat the oven to 375 degrees F (190 degrees C). Lightly grease
cookie sheets.
3.Before rolling out the dough, dust the rolling surface heavily with
confectioners' sugar. Roll the dough out to 1/8 inch thickness. Cut
into 1x4 inch strips. Place a cherry on the end of each strip. Roll up
each strip starting with the cherry. Place on prepared cookie sheets
and dust with a little of the confectioners' sugar.
4.Bake for 7 to 10 minutes in the preheated oven. Cookies should
brown slightly. Dust again with the confectioners' sugar. Allow
cookies to cool before serving, the cherries are very hot!
