2. Welcome Apprentice Sushi Chef (Itamae). You are about to enter the world of
Sushi, and it’s not the kind you order at Taste of Asia, either. This is the real
stuff. After being hired to a sushi team by an authentic Japanese restaurant, you
are under the authority of Master Sushi Chef “Yamakawa-sensei”. Your first day
on the job is Monday, so you must quickly educate yourself in the art of sushi
making! Don’t disappoint Yamakawa-sensei! Are you ready to explore, discover,
and create your own sushi rolls?! Hajime!
3. Your sushi team of 4 must delegate tasks to fully uncover the art of sushi-making!
#1 Historian: You must research the history of sushi by 1) discovering the origin of the
food, 2) the meaning behind the name, and 3) meaning behind the shape.
#2 Artist: You must research the process of making sushi, and create a step-by-step
guide for 1) preparing, 2) rolling, and 3) presenting/eating sushi, and labeling all the
parts included.
#3 Cataloger: You must research the 1) types of sushi, and 2) show 1 example with
names of each, and 3) including the ingredients.
#4 Marketer: You must research the international popularity of sushi. You must identify
3 similarities and 3 differences to sushi culture in the US and sushi culture in Japan.
After each of you have completed your part, record the information in a word document, a
separate page for each task, and print and staple it together like a book. This will be the
handbook for all future sushi apprentices.
