However, it isequally as important to educate people onthe “hows” of eating, which have a profoundeffect on our health and wellness.Much of our modern lives revolve aroundconvenience and the mounting pressure forsky-high productivity. Many people actuallyfeel that taking the time out to fully enjoy ameal has become something of a guilty pleasure.With this article, I invite you to adopt a counter-cultural stance, and to consider how incrediblyimportant it is to take time out to leisurelyenjoy one of life’s greatest pleasures.How often do you assess your mental/emotionalstate before a meal? Have you noticed how thestate you are in greatly affects not only yourchoices of what to eat, but also how you eat andhow much you eat? Eating in a state of stressconstricts blood flow to our stomach and there-fore greatly impedes digestion. When digestion isnot working properly, bloating, gas, constipation,low energy and ultimately weight gain ensue.Easy and free: become a “slow eater”With the obesity epidemic dangerously onthe rise, part of the solution is to become a sloweater; it’s simple, easy and free. According to astudy recently reported by the BBC, “Speedyeating doubles your risk of weight gain. Fillingyour stomach too quickly interferes with thebody’s feedback system that tells you are full,simply by not letting the signals catch up toconsumption. While wolfing down meals mayhave once had an evolutionary advantage in thetimes of the hunter-gatherers, today, our healthdepends on leaving that habit behind.”To make any change in our lives, we need to firstunderstand clearly where we are at, and set real-istic and attainable goals. What kind of eater areyou? A fast eater, a slow eater? A stand-over-the-kitchen-counter eater? An in-the-car eater? Orperhaps you take most of your daily meals at thecomputer and wonder how that food disappearedso quickly because you cannot evenremember eating it?Mindful eating is the opposite of the feeding“frenzy” that occupies many of us; it involvesusing all of your senses to eat. Notice the color,smell, taste and texture of each bite.Try a few of these simple tipsfor mindful eating:• Sit in silence for one minute before youbegin eating. This is a good time to givethanks. Take three deep breaths.• Eat only when you are sitting down at atable without the distractions of a TV,computer, book or magazine.• Do not eat when you are upset.• Eat until you are 80% full.• Sit for a few minutes after you finisheating; say thanks after your meal,talk with a friend or take a light stroll.• After you are finished, notice how thefood you just ate makes your body feel.Put down that fork and chewThe second part to this equation is chewing.Chewing leads to smooth digestion and greaterassimilation of nutrients. Whatdo we currently know about thismysterious condition?Although often regarded as an illness amongthe elderly, the average age of diagnosis isactually 60. Parkinson’s disease rarely runs infamilies. For reasons still unknown, men getParkinson’s disease about twice as frequentlyas women, and they tend to get it at a slightlyyounger age than women.The most common reason people seek medicalattention for Parkinson’s disease is becausethey notice a tremor, or shaking, of one oftheir limbs, most often in a hand on just oneside. Other common and early symptoms maybe shuffling or dragging one foot while walking,a sense of stiffness and slowness of movement,a reduction of spontaneous gestures or facialexpression, and poor legibility and small sizeof handwriting.There are even earlier indicators of the disease,including an impaired sense of smell, constipa-tion and depression.A challenge to diagnoseDiagnosing Parkinson’s is challenging, particu-larly very early in the disease when the symptomsmay be troubling but still mild. In this dayof high technology Parkinson’s is most oftendiagnosed when a clinician questions the patientcarefully about symptoms, and then performs aneurological physical examination to look forconfirming signs. Even experienced cliniciansare sometimes uncertain about the diagnosis,and there are no reliable, confirming tests. AnMRI of the brain cannot detect Parkinson’sdisease. Scans that examine brain chemistry arenot entirely reliable for confirming the diagnosis.Although we have learned a lot in recent yearsabout Parkinson’s disease, the fundamentalcause remains elusive. There is often a smallerconcentration of dopamine, a naturallyoccurring brain chemical, in the brains ofpeople with Parkinson’s disease. The neuronsthat make dopamine, located in a small clustertoward the top of the brain, become sick, andsome of them die. Neurons in the spinal cord,and even in the gut, are also affected. Thiswidespread occurrence of the disease helpsaccount for the disease’s diverse symptoms.Other symptoms include sleep disturbances,constipation, bladder problems, erectiledysfunction, excessive sweating and saliva,and even limb pain. Additionally, some peoplemay experience cognitive decline. This is morelikely to occur among the very old who havesevere motor difficulties.The role of healthy eating,physical activity and brain exerciseThe optimal treatment of Parkinson’s diseaseintegrates several components including ahealthy lifestyle with a sound diet, exercise,and social and intellectual engagement.We are physical and social animals and ourbrains require exercise and interaction formaintenance. Usedwith experience and attention they clearlyimprove quality of life.Deep brain stimulation surgery for Parkinson’sdisease, where stimulating electrodes arepermanently implanted in the brain, is gainingattention as a treatment that may be superiorto medications in some patients.The evidence points toward a more favorableoutcome when treatment is initiated earlierrather than later. Putting off treatment maybe detrimental and early intervention isdefinitely preferable.Although the cause of Parkinson’s diseaseis unknown, we now know much more aboutthe disease process. Using this knowledgestudies have been done and are now underwayto develop strategies to slow or ultimatelyhalt the disease progression. For example,energy production within cells is abnormalin Parkinson’s disease, and this may contributeto the cell’s demise. Strategies to enhanceenergy production include CoEnzyme Q-10and creatine. After weeks oflabor, he had transformed it into a gloriousgarden splashed with colorful flowers. Thisgarden was so beautiful that passersby wouldexclaim, “Oh, what a great thing God hasdone!” The man replied, “Yeah, you shouldhave seen it before I got to it.”We need to remember that before “we” got to it,God’s kingdom was perfect. We were designed toenjoy walking through the Garden of Eden withGod, enjoying all the plants and animals, not aweed or a sickness to be found. But even afterAdam and Eve ate the forbidden fruit, even afterthey were driven out of paradise, God left tothem and all their descendants this great andglorious world of ours, flaws and all.My garden, His gloryWhen I walk through my garden, I’m amazed. Imarvel at the intricacy of the flowers and thetiny iridescence of hummingbirds. I wonder atthe symmetry of the leaves on the trees. I’mgrateful for it all, and I give thanks to God forthe opportunity to enjoy His creation, every dayof my life on this Earth.Perhaps this Earth Day can be our reminderthat we are caretakers, stewards of God’screation. Calories from beverages are on the riseChapel Hill, North CarolinaAmericans are getting 94% more calories from beverages than they did in the early 1960s, according toresearchers at the University of North Carolina at Chapel Hill School of Public Health. That’s an averageof 222 extra calories per day.Beverages comprised 12% of daily calories in 1965; by 2002, beverages accounted for 21% of daily caloricintake. Over the course of the study, calories from whole milk consumption decreased 45%, while caloriesfor alcohol increased 73% and fruit juice calories increased 20%.“This has considerable implications for numerous health outcomes, including obesity and diabetes as thisis just adding several hundred calories daily to our overall caloric intake,” said Barry M.
