Ingredients for Syrup
• 500gr water
• 700gr sugar
• 1 orange cut in two
• 2 cinnamon sticks
• 100gr honey
We put everything, but the honey in a pot, and we let the boil for a minute. We
remove the pot from the fire, we add the honey and let the syrup cool.
9. Ingredients for the Cakes
• 400gr orange juice
• 520gr olive oil
• 1200gr flour
• 30gr confectioner’s sugar
• ½ tea spoon soda (powder)
• 1 tea spoon cinnamon
• 1/6 tea spoon ground clove
• 50gr butter
• Zest from one orange
We put all the liquid ingredients, the butter, the sugar, the soda and
the spices in a big bowl. We mix everything with our hands, adding
slowly the flour. The dough should not become very firm.
After that we make oval shaped "cakes", and on the upper side we
make small holes using the tip of a fork.
We bake them on baking paper, in a preheated oven at 180 degrees
Celsius for about 30 minutes. They should get a deep gold colour, so
maybe they need a bit more time. When they are done we put them
warm in the syrup, move them around for a minute and then let them
lose the excess syrup.
For the last touch we need some more honey, and ground (in big
pieces) walnut. On a plate we put some honey with walnuts then some
melomakarona. On top of them we put some honey and walnuts, and
then some more melomakarona etc...
