INTRODUCTION
 Jamun (Syzygium Cuminii. L), a fruit of great antiquity is
highly liked for its pleasing flavoure.
 The juicy fruit pulp contains resin, gallic acid and tannin; it
tastes usually from acid to fairly sweet.
 It is also valued for its several medicinal properties.
 The sweetened Jamun juice is a delicious fruit beverage.
 Fruits are rich in minerals and have high antioxidant property
which contribute to many health benefits.
 Jamun is highly perishable, therefore, very difficult to store
and market at distant places
 Jamun seeds are used in traditional medicine.

 Ingredients for making Black Jamun Ice-cream
 2 1/2 cup (1/2 litre) milk (low fat)
 2 tablespoon corn flour
 1 1/2 cup chopped Fresh Black Jamun
 4 teaspoon Sugar substitute
Method for making Black Jamun Ice-cream
 Mix cornflour in 1/2 cup of cold milk and keep aside.
 Take a non-stick pan and bring the remaining milk to a boil and
add the cornflour mixture.
 Stir continuosly over a slow flame.
 Continue this procedure till it coats the back of the spoon.
 Now cool completely and add the sugar substitute.
 Add the black jamun and mix well.
 Pour into an air-tight container.
 Freeze for nearly 4 to 6 hours.
 Now, take it out and blend it in a blender till it is slushy.
 Pour again into the air-tight container.
 Now freeze till the ice-cream is set.
 Ingredients
 2 cup chopped jamun (purple/black) (Remove seeds)
 1 cup ice cubes
 1 cup water
 1 tbsp sugar / 3 teaspoon honey
 Pinch Black Salt
 Pinch black pepper powder
 1 lemon juice
 3 - 4 mint leaves (for garnish)
 Jamun slice (for garnish)

 Recipe:
 1. Take a mixer bowl, add chopped jamun, sugar /
honey, lemon juice, black salt, black pepper powder,
water and half cup of ice cubes in it.
 2. Blend it properly till become smooth.
 3. Take a serving glass, add ice cubes, jamun juice in
it and garnish with mint leaves and jamun slice.
Steps of making jamun seed powder
1. Clean & Separate Seeds from Fruits
2: Sun-dry the Seeds
 3.Peel Off the Outer Shell
4.Dry the Inner Core

 6: How to Use the Jamun Seed Powder
 Take about half a tea-spoon, that is about 3 grams, of the
seed powder early morning with water in empty stomach.

 Kala jamun pulp 1 cup
 Sugar 1 cup
 Liquid glucose 1 tablespoon
 Cinnamon powder a pinch

Cook sugar with 1 cup water till you get a syrup of two
string consistency.
 Step 2
Add liquid glucose and mix. Add black jamun pulp and
mix.Add cinnamon powder, clove powder and mix.

transfer into sterilized glass jar. Serve.
