Gran fuente de carbohidratos y proteínas. Presenta un excelente balance de
aminoácidos esenciales. Las semillas se consumen en sopas, graneadas con
sal o azúcar, cocidos en torrejas con ají o queso y como bebida refrescante.
COMMON USE AND APPLICATIONS
This Andean native cereal was one of the basic foods of ancient Peruvians. It
is a great source of carbohydrates and protein; it has an excellent balance of
essential amino acids. The seeds are used in soups, salty or sugared grains,
in omelets with hot peppers or cheese, and as a refreshing beverage.
