Vesper
Sipsmith barley vodka, sipsmith dry
gin, cocchi americano vermouth
— £11.00
The original recipe for the Vesper
was created by popular spy novelist Ian
Fleming. In Fleming’s 1953 book
“Casino Royale”, Agent 007 instructs
the bartender to prepare it. Bond named
the drink after Vesper Lynd, his first love
interest in the series.

White Lady
Tanqueray gin, cointreau, lemon
juice, sugar syrup, egg white
— £11.00
This cocktail was devised by Harry
MacElhone in 1919 at Ciro’s Club in
London. He originally used crème de
menthe, but replaced it with gin at
Harry’s New York Bar in Paris in 1929.
But The Savoy’s Harry Craddock also
claims the White Lady. The recipe
appears in his “Savoy Cocktail Book”,
published in 1930.

the Bloody Mary in 1921 by mixing
equal parts tomato juice and vodka.

Tanqueray gin, crème de violette,
maraschino liquor, lemon juice
— £11.00
It is generally considered to be a London
drink, since its most prominent early
appearance was in Harry Craddock’s
classic “Savoy Cocktail Book” in 1930.
In pre-Prohibition New York, the drink
was found in 1916 “Recipes for Mixed
Drinks” by Hugo Ensslin the head
bartender at the Wallick House Hotel in
Times Square.

Negroni
Tanqueray gin, cocchi di torino
vermouth, campari

1900s by a Florentine aristocrat, Count

bartender to add some bite to his
preferred cocktail, the Americano.
With an addition of gin, an instant
classic was conceived and the Negroni
became legendary.

The Secret
Cocktail
Tanqueray gin, apple-jack, lemon
juice, tac grenadine, egg white
— £12.00
This is a forgotten cocktail, in the truest
sense; it is cloaked in familiarity because
of its similarities to the Pink Lady cocktail.
Adding some applejack to the original
recipe made the drink immeasurably
tastier, but not one whit sweeter. However
its history is obscure and we might never
know who first created it.

Clover Club
Tanqueray gin, lemon juice, sugar
syrup, raspberries, egg white
— £11.00
The Clover Club drinker is traditionally a
gentleman of the pre-Prohibition school.

it was made in the bar of the Bellevue
Stratford Hotel in Philadelphia where the
Clover Club members gathered and the
drink originated. The drink didn’t break
out of Philadelphia until 1910.

comprised only foreigners, who were
senior government and military officials
and prominent businessmen. The recipe
appeared in the “Savoy Cocktail Book” of
1930 by Harry Craddock and was called
The Pegu Club Cocktail.

Red wine, oranges, wholenut, cloves, ginger,
cinnamon, star anice, nutmeg, vanilla
£11.00
Mulled wine dates back to Roman antiquity, but it wasn’t until the 14th century
that the mix of wine, fruit and spices gained its name, from an Old English
word meaning “muddled.” While the word “muddle” is most commonly used today
to denote a generally confused state, in its original meaning, that confused state
was brought about with alcohol. It is thought that the process of mulling wine
was first employed as a way to save wine that was about to spoil.
In medieval times these wines were called Ypocras or Hipocris, named after the
physician Hippocrates. They were thought to be very healthy, and indeed, with wine
at the time being far more sanitary than water, these heated drinks probably did
keep people healthy through the cold winters.
Moving forward to the 1500s, cookbooks listed methods of mulling “Clarrey”,
or Bordeaux. Recipes involved honey, cinnamon, cardamom, galingale and of course
French wine. Mulled wine was a favourite in Victorian England, and Negus -
a type of mulled wine - was even served to children at their birthday parties.
Today, mulled wine is a staple at many holiday parties.
Charles Dickens gets the credit for elevating mulled wine into a traditional
holiday drink. While mulled wine appeared in several of the beloved novelist’s
books, it was its appearance in his popular short story, A Christmas Carol,
that sealed its place in Christmas culinary history.

Red wine, oranges, wholenut, cloves, ginger, cinnamon, star anice, nutmeg, vanilla £11.00 Mulled wine dates back to Roman antiquity, but it wasn’t until the 14th century that the mix of wine, fruit and spices gained its name, from an Old English word meaning “muddled.” While the word “muddle” is most commonly used today to denote a generally confused state, in its original meaning, that confused state was brought about with alcohol. It is thought that the process of mulling wine was first employed as a way to save wine that was about to spoil. In medieval times these wines were called Ypocras or Hipocris, named after the physician Hippocrates. They were thought to be very healthy, and indeed, with wine at the time being far more sanitary than water, these heated drinks probably did keep people healthy through the cold winters. Moving forward to the 1500s, cookbooks listed methods of mulling “Clarrey”, or Bordeaux. Recipes involved honey, cinnamon, cardamom, galingale and of course French wine. Mulled wine was a favourite in Victorian England, and Negus - a type of mulled wine - was even served to children at their birthday parties. Today, mulled wine is a staple at many holiday parties. Charles Dickens gets the credit for elevating mulled wine into a traditional holiday drink. While mulled wine appeared in several of the beloved novelist’s books, it was its appearance in his popular short story, A Christmas Carol, that sealed its place in Christmas culinary history. 1863 Mulled Wine Grand Marnier Cuvée Du Centenaire The perfect blend of finest XO Cognac & exotic orange essence served with a Grand Oolong tea Ice Ball £30.00 .
