In the proceeding years, Captain Anderson began experimenting by using the 3-year aged casks from the ship to create a range of unique, and individual aged rums. The result was a range of exceptionally smooth rums layered with elegant flavours. The rum in these bottles are a recreation of the recipe created from the original rums from Crooked Island.

due in part to the abun-
dance of minerals in
the chalky soil.

Meursault, pronounced [mur-soh]
derives its name from muris sal-
tus, the “mouse-leap” stream, so
named by Roman soldiers who
occupied the region. Like most
words, it comes off way more im-
pressive in French.
According to local legend, the great
French white Burgundy, Corton-Char-
lemagne, owes its existence, not to
the emperor Charlemagne, but to his
wife. The red wines of Corton stained
his white beard so badly that she per-
suaded him to plant vines that would
produce white wines instead. The
rest, as they say, is history.
Grand Cru (great growth)
is the highest level in the
vineyard classification of
Burgundy. Their origin of
can be traced to the work
of the Cistercian monks
who were able to isolate
plots producing wines of
distinct character. Their
are just 480 designated
Grand Cru acres growing
white wines.

is a California cult-classic with

In the 1860’s a devastat-
ing bout of Phylloxera nearly
wiped out the California wine
industry, killing off nearly 70%
of the vinestock. It was dis-
covered that by grafting vines
on to certain strains of resis-
tant rootstock, the epidemic
could be contained.

A SUPER TUSCAN is a wine made out-
side of the DOC laws, but prominent in
presence. Prominent Tuscan winemakers
began skirting the laws back in the 70’s
when the quality fell due to poor blending,
this forced the wine to be classified as Vin
de Tavola, or simply “Table Wine.’ Rec-
ognizing the high quality, journalists be-
gan dubbing these wines “Super Tuscans”,
and the moniker stuck. These wines are
now classified as IGT under revised Italian
guidelines.

that sweet sticky gets to your glass.
DRIED GRAPES
NOBLE ROT
Grapes are left on the vine
to “over-rippen” and in-
crease sugar levels. Har-
vest takes place as late as
December.
In colder climates grapes go
under a “hard freeze”, they
are then pressed to produce
a viscous liquid high in con-
centrated sugars.
Sometimes called “rai-
sin wine” or “straw wine”,
grapes are harvested and
then hung or laid in the sun
to dry before pressing.
Botrytis (aka- noble rot) is
a beneficial form of fungus
that, on healthy grapes, con-
centrates the sugars mak-
ing for a complex, honeyed
character in the wine.
Sounds terrible.
Tastes divine.
A fortified wine from the Douro re-
gion in Portugal, PORT became wild-
ly popular when English merchants
started adding brandy to preserve
the wine for export.
PEDRO XIMÉNEZ, or PX
is a white Spanish grape
that’s dried in the sun,
making a thick, black
juice with flavors of mo-
lasses and chocolate.
