“Whether your glass is half full or half empty,
there’s always room for more WINE.”
BLANC DE BLANC
is made from light
skinned grapes,
typically Chardon-
nay, while BLANC DE
NOIR is made primar-
ily from those with
red skin such as Pinot
Noir or Pinot Meunier.
HEADS UP!
A champagne cork on the fly can reach speeds of up to
50 mph and travel 177 ft, or half the distance of a football field.
Keep your champagne cold to prevent your cork from turning into a
canon. Like mama said, it’s all fun and games ‘til
somebody puts an eye out.
“CHAMPAGNE FOR MY REAL
FRIENDS AND REAL PAIN FOR MY
SHAM FRIENDS.”
	 -TOM WAITS
In 2003 an unopened bot-
tle of Veuve Clicquot was
discovered inside of a side-
board at a Scottish Castle.
The bottle dating back to
1893 was in mint condition,
and is thought to be the
oldest bottle in existence.
It’s now on display at the
Veuve Clicquot Ponsardin
visitor center in Reims and
is considered priceless.
. Champagne must come from the des-
ignated appellation in France, otherwise
those bubbles are called sparkling wine

BRING ON THE BUBBLES
3
The Spanish house of Raventos has been pro-
ducing wine for more than 500 years (and in the
same family no less). Their Cava is a favorite of
sommeliers and critics-in-the-know, and we’re
mighty fond of it too!
LET’S TOAST TO THAT!
According to some legends,
the tradition of clinking one’s
glasses together stemmed
from the fear of poisoning.
The action would lead to the
liquid spilling over into each
other’s glass, thus putting both
parties at equal disadvantage
should the drink be tainted.
Spain = Cava
Italy = Prosecco
USA = Traditional Method
Germany = Sekt
Portugal = Espumante
A Champagne by any other name...
All Chablis is made from 100%
Chardonnay grapes. The wine in this appellation is
typically unoaked, leading some to believe that Chablis is
one of the “purest” expressions of the varietal character.
Wine making in this region dates back to
the 12th century Cistercian monks.

THE NIGHT’S RIGHT FOR WHITE
5
“She gets to keep the Chalet
and the Rolls,
I want the Montrachet.”
-Forbes Magazine, May 6, 1996
Chardonnay is
the world’s most
planted grape varietal.
In Burgundy, it takes on a
clean, crisp flavor profile
due in part to the abun-
dance of minerals in
the chalky soil.
WHAT’S IN A NAME?
Meursault, pronounced [mur-soh]
derives its name from muris sal-
tus, the “mouse-leap” stream, so
named by Roman soldiers who
occupied the region. Like most
words, it comes off way more im-
pressive in French.
According to local legend, the great
French white Burgundy, Corton-Char-
lemagne, owes its existence, not to
the emperor Charlemagne, but to his
wife. The red wines of Corton stained
his white beard so badly that she per-
suaded him to plant vines that would
produce white wines instead. The
rest, as they say, is history.
Grand Cru (great growth)
is the highest level in the
vineyard classification of
Burgundy. Their origin of
can be traced to the work
of the Cistercian monks
who were able to isolate
plots producing wines of
distinct character. Their
are just 480 designated
Grand Cru acres growing
white wines.

Our Father, Who Art in California
Credited with planting the first vineyards in California
in 1769, Spanish missionary Junípero Serra has been
called the “Father of California Wine”.
Wine-grapes
were still grown
during Prohibition,
California winemakers
shipped grapes to home
blenders across the states
who could produce up to 200
gallons for (uhhh) home use.
Some wineries also made
“sacramental” bottles
Intended only for
religious services,
not all made it
to church.
“NAPA VALLEY IS A
WINE DISNEYLAND,
WHILE SONOMA VALLEY
IS A WINE REGION.”
	 –Tom C. Wark
THAT’S A LOT OF JUICE!
In terms of acreage, wine
grapes rank #1 among all
crops planted worldwide.
In the 1940’s, there wasn’t very
much Chardonnay planted in Cali-
fornia. A 1941 census showed less
than 100 acres statewide. Today,
Chardonnay vineyards are planted
on more than 100,000 acres.

UP IN SMOKE
FUMÉ BLANC literally translates
to “white smoke”, and refers to
the flinty taste of the grape. This
term is only used in Sauvignon
Blanc produced in America.
Robert Mondavi is credited with
making the term popular to dif-
ferentiate California wines from
the popular Pouilly Fumé Blancs
of the Loire Valley.

SMARAGD wines get
their name from a little

in the vineyards of the
Wachau and bears the
same name. The word
is derived from the Latin
for emerald.

SOAVE (pronounced So-Ah-Ve) is a dry
white Italian wine from the Veneto region in
northeast Italy. While it’s not well known in
the U.S. today, in the 70’s Soave was the #1
selling Italian DOC, even surpassing Chianti.
Today it’s been eclipsed by sales
of Pinot Grigio.

With its high acidity and
clean and zesty palate,
GRÜNER VELTLINER is easy

characteristics have made
this wine an increasingly
popular favorite at the din-
ner table.

Grown in the Piedmont region of
Italy, ARNEIS translates to “little
rascal”. due to its fickle nature to
grow. It’s referred to as the White
Barolo as it often drinks like a red.

CRIME &
PUNISHMENT
The Code of Hammurabi (1800 B.C.)
includes a law that punishes fraudulent
wine sellers: They were to be
drowned in a river.
A
PRETTY IN PINK
ROSÉ gets its lovely blush
coloring from contact with
red grape skins; the longer
the wine is allowed to mac-
erate, the deeper the col-
or. Unlike fine cheese and
Dame Helen Mirren, Rosé
doesn’t usually get better
with age, so drink-up!
Bang for your buck, it’s hard
go wrong with a Spanish
wine. Most tend to be light,
dry and crisp and pair well
with food or just sipping in
the sun.
ROME DIDN’T
FALL IN A DAY
Ancient Romans discov-
ered that adding lead to
their wine served both as a
preservative and a sweet-
ener. Chronic lead poison-
ing is thought to be one of
the factors that lead to the
decline of the empire.

The true
meaning of
Pinot Noir is
“pine black”. Pine
because of the pine
cone shape of the
clusters. And black
because of the dark
purple color of
grapes.

SCREW THAT.
The earliest reference
to a corkscrew dates back the
mid-1600’s and is thought
to be a devise derived from
a musket cleaning tool. The
most expensive corkscrew
ever sold garnered $64,000
at a London auction in 2014.
Its parts were made from
pieces of the London bridge
demolished in 1830.
A person who collects
corkscrews is called a
HELIXOPHILE.

THAT’LL GIVE YOU A BUZZ...
A mixture of red Bordeaux and Coca leaves called
“Coca Wine” was the ancestor to Coca Cola. The
combination of cocaine and alcohol was thought
to provide health and vitality. Popular in Europe,
American John Pemberton was forced to make
a non-alcohol version sans wine to sell stateside
due to Prohibitionary laws.

“I CAN CERTAINLY
SEE THAT YOU
KNOW YOUR WINE.
MOST OF THE
GUESTS WHO STAY
HERE WOULDN'T
KNOW THE DIF-
FERENCE BETWEEN
BORDEAUX AND
CLARET.”
-John Cleese, Fawlty Towers
Though it has fallen out of
fashion, the word claret,
from ‘clairet’ or clear, was for
centuries used by the British
as a generic term for Bor-
deaux red wine.
An Imperi-
al (the equivolent
to 8 bottles) of 1947
Chevel Blanc fetched
the highest sale price
ever at a whopping
$304,000.
It’s worth noting, a 6 Liter of 1992
Screaming Eagle sold at a charity
auction in 2000 for $500,000.
As the money was for charity and
closed at a reduced, undisclosed
price, this sale is generally dis-
counted.

“WHAT WINE GOES

	 -George Carlin
HINT: not these
DIAMOND IN THE ROUGH
In 1966, before he had even
purchased the vineyard site, Al
Brounstein smuggled-in vine cut-
tings from two Premier Cru prop-
erties in Bordeaux. Fast forward
50 years later, Diamond Creek
is a California cult-classic with
worldwide recognition. Who says
crime doesn’t pay?
In the 1860’s a devastat-
ing bout of Phylloxera nearly
wiped out the California wine
industry, killing off nearly 70%
of the vinestock. It was dis-
covered that by grafting vines
on to certain strains of resis-
tant rootstock, the epidemic
could be contained.
PHYLLOXERA
is a pest described as
a “louse of yellowish
color” that feats on
living vine roots, ef-
fectively killing off
the entire plant.

ing, landing, or taking off of flying saucers in the
commune.

“MY ONLY REGRET IN LIFE
IS THAT I DID NOT DRINK
MORE WINE.”
		 -Ernest Hemingway
“A BARREL OF WINE
ACHIEVES MORE MIRA-
CLES THAN A CHURCH
FULL OF SAINTS.”
-Spanish proverb
EVERY WINE HAS ITS TIME
Considered the “1st growth
of Spain”, VEGA SICILIA
is revered as one of the
world’s great wines. De-
pending on the vintage,
the wine could be held for
decades until it is released,
the winery only brought
their 1968 vintage to mar-
ket in 1991 after 23 years
in barrel.
KALIMOTXO
is a popular Span-
ish drink made of equal
parts red wine and cola
and served over ice. It’s
becoming ever more popu-
lar outside of the country
and can now be found at
many trendy bars and
restaurants.
THE SUN ALSO RISES
During his time in Spain,
Ernest Hemingway devel-
oped a love for the wines
of Rioja which he consid-
ered some of the least ex-
pensive and most satisfy-
ing reds.

HOLY MOLY!
Which country drinks the
most wine per capita?:
THE VATICAN.
(On average each citizen con-
sumes 99 bottles per year.)
YZYZYZYZYZY
A SUPER TUSCAN is a wine made out-
side of the DOC laws, but prominent in
presence. Prominent Tuscan winemakers
began skirting the laws back in the 70’s
when the quality fell due to poor blending,
this forced the wine to be classified as Vin
de Tavola, or simply “Table Wine.’ Rec-
ognizing the high quality, journalists be-
gan dubbing these wines “Super Tuscans”,
and the moniker stuck. These wines are
now classified as IGT under revised Italian
guidelines.
THE BAROLO WARS
A term used to describe the
ongoing battle between tra-
ditionalists who wish to pre-
serve time honored tech-
nique and modernists who
are aiming for bigger, more
toasted flavors achieved
through the use of new oak.
MOLTO VINO!
Italy is the largest wine producing re-
gion in the world cranking out nearly 5
billion liters of wine per year.

“I LIKE BEST THE WINE DRUNK AT
THE COST OF OTHERS.”
-Diogenes the Cynic
Don’t.
We.
All.
“I know nothing about wine, I know how to
make wine, but I know nothing about wine, and each
day I discover that I know less.”
-Serge Hochar, Chateau Musar
PINOTAGE is a man-made
hybrid of Pinot Noir and
Cinsaut designed to thrive
in South Africa’s hot, dry
climate. It’s flavors most
resemble that of Shiraz.
A French grape, MALBEC
vines were first brought to
Mendoza, Argentina from
their native country in 1868
by a botanist on order of a
nostalgic governor missing
the wines of his homeland.
A MOST DANGEROUS VINTAGE
Grown in Lebanon’s ancient Bekaa Valley, CHATEAU
MUSAR has achieved cult status amongst wine lovers
in-the-know. Producing vintages even throughout a
violent 20 year civil war, the Hochar family have sin-
gle handedly put the country on the map as a fine
wine region of note.

LATE HARVEST
ICE-WINE/
EISWEIN
NECTAR OF THE GODS
There’s more than one way to skin a cat, or in
this case, get sugar from a grape. Here’s how
that sweet sticky gets to your glass.
DRIED GRAPES
NOBLE ROT
Grapes are left on the vine
to “over-rippen” and in-
crease sugar levels. Har-
vest takes place as late as
December.
In colder climates grapes go
under a “hard freeze”, they
are then pressed to produce
a viscous liquid high in con-
centrated sugars.
Sometimes called “rai-
sin wine” or “straw wine”,
grapes are harvested and
then hung or laid in the sun
to dry before pressing.
Botrytis (aka- noble rot) is
a beneficial form of fungus
that, on healthy grapes, con-
centrates the sugars mak-
ing for a complex, honeyed
character in the wine.
Sounds terrible.
Tastes divine.
A fortified wine from the Douro re-
gion in Portugal, PORT became wild-
ly popular when English merchants
started adding brandy to preserve
the wine for export.
PEDRO XIMÉNEZ, or PX
is a white Spanish grape
that’s dried in the sun,
making a thick, black
juice with flavors of mo-
lasses and chocolate.

  • 2. BLANC DE BLANC is made from light skinned grapes, typically Chardon- nay, while BLANC DE NOIR is made primar- ily from those with red skin such as Pinot Noir or Pinot Meunier. HEADS UP! A champagne cork on the fly can reach speeds of up to 50 mph and travel 177 ft, or half the distance of a football field. Keep your champagne cold to prevent your cork from turning into a canon. Like mama said, it’s all fun and games ‘til somebody puts an eye out. “CHAMPAGNE FOR MY REAL FRIENDS AND REAL PAIN FOR MY SHAM FRIENDS.” -TOM WAITS In 2003 an unopened bot- tle of Veuve Clicquot was discovered inside of a side- board at a Scottish Castle. The bottle dating back to 1893 was in mint condition, and is thought to be the oldest bottle in existence. It’s now on display at the Veuve Clicquot Ponsardin visitor center in Reims and is considered priceless. . Champagne must come from the des- ignated appellation in France, otherwise those bubbles are called sparkling wine

  • 4. The Spanish house of Raventos has been pro- ducing wine for more than 500 years (and in the same family no less). Their Cava is a favorite of sommeliers and critics-in-the-know, and we’re mighty fond of it too! LET’S TOAST TO THAT! According to some legends, the tradition of clinking one’s glasses together stemmed from the fear of poisoning. The action would lead to the liquid spilling over into each other’s glass, thus putting both parties at equal disadvantage should the drink be tainted. Spain = Cava Italy = Prosecco USA = Traditional Method Germany = Sekt Portugal = Espumante A Champagne by any other name... All Chablis is made from 100% Chardonnay grapes. The wine in this appellation is typically unoaked, leading some to believe that Chablis is one of the “purest” expressions of the varietal character. Wine making in this region dates back to the 12th century Cistercian monks.

  • 6. “She gets to keep the Chalet and the Rolls, I want the Montrachet.” -Forbes Magazine, May 6, 1996 Chardonnay is the world’s most planted grape varietal. In Burgundy, it takes on a clean, crisp flavor profile due in part to the abun- dance of minerals in the chalky soil. WHAT’S IN A NAME? Meursault, pronounced [mur-soh] derives its name from muris sal- tus, the “mouse-leap” stream, so named by Roman soldiers who occupied the region. Like most words, it comes off way more im- pressive in French. According to local legend, the great French white Burgundy, Corton-Char- lemagne, owes its existence, not to the emperor Charlemagne, but to his wife. The red wines of Corton stained his white beard so badly that she per- suaded him to plant vines that would produce white wines instead. The rest, as they say, is history. Grand Cru (great growth) is the highest level in the vineyard classification of Burgundy. Their origin of can be traced to the work of the Cistercian monks who were able to isolate plots producing wines of distinct character. Their are just 480 designated Grand Cru acres growing white wines.

  • 8. Our Father, Who Art in California Credited with planting the first vineyards in California in 1769, Spanish missionary Junípero Serra has been called the “Father of California Wine”. Wine-grapes were still grown during Prohibition, California winemakers shipped grapes to home blenders across the states who could produce up to 200 gallons for (uhhh) home use. Some wineries also made “sacramental” bottles Intended only for religious services, not all made it to church. “NAPA VALLEY IS A WINE DISNEYLAND, WHILE SONOMA VALLEY IS A WINE REGION.” –Tom C. Wark THAT’S A LOT OF JUICE! In terms of acreage, wine grapes rank #1 among all crops planted worldwide. In the 1940’s, there wasn’t very much Chardonnay planted in Cali- fornia. A 1941 census showed less than 100 acres statewide. Today, Chardonnay vineyards are planted on more than 100,000 acres. “WHATEVER DOESN’T KILL YOU, MAKES YOU WATCH A LOT OF CARTOON NETWORK AND DRINK MID-PRICE CHARDONNAY AT 11 IN THE MORNING.” -Conan O’Brien A B BUMPER CROP

This term is only used in Sauvignon Blanc produced in America. Robert Mondavi is credited with making the term popular to dif- ferentiate California wines from the popular Pouilly Fumé Blancs of the Loire Valley. YOU DON’T SAY... While it’s not well known in the U.S. today, in the 70’s Soave was the #1 selling Italian DOC, even surpassing Chianti. Today it’s been eclipsed by sales of Pinot Grigio. RICO SOOOAVE What’s the difference between Pinot Gris and Pinot Grigo? The spelling. “White wine is like bottled electricity.” -James Joyce OENOPHOBIA: The fear or intense dislike of wine. An Imperi- al (the equivolent to 8 bottles) of 1947 Chevel Blanc fetched the highest sale price ever at a whopping $304,000. It’s worth noting, a 6 Liter of 1992 Screaming Eagle sold at a charity auction in 2000 for $500,000. As the money was for charity and closed at a reduced, undisclosed price, this sale is generally dis- counted. $$$ BLING IT ON! STUFF MY SOM SAYS... • 36. LATE HARVEST ICE-WINE/ EISWEIN NECTAR OF THE GODS There’s more than one way to skin a cat, or in this case, get sugar from a grape. Here’s how that sweet sticky gets to your glass. DRIED GRAPES NOBLE ROT Grapes are left on the vine to “over-rippen” and in- crease sugar levels. Har- vest takes place as late as December. In colder climates grapes go under a “hard freeze”, they are then pressed to produce a viscous liquid high in con- centrated sugars. Sometimes called “rai- sin wine” or “straw wine”, grapes are harvested and then hung or laid in the sun to dry before pressing. Botrytis (aka- noble rot) is a beneficial form of fungus that, on healthy grapes, con- centrates the sugars mak- ing for a complex, honeyed character in the wine. Sounds terrible. Tastes divine. A fortified wine from the Douro re- gion in Portugal, PORT became wild- ly popular when English merchants started adding brandy to preserve the wine for export. PEDRO XIMÉNEZ, or PX is a white Spanish grape that’s dried in the sun, making a thick, black juice with flavors of mo- lasses and chocolate.
