Food preparation and production in commercial kitchens or food processing factories naturally generate fats, oils and grease (FOG) in the waste water which can quickly lead to a build-up of solid residues in the drainage system restricting efficient flow of waste water and ultimately create blockages that can result in flooding of the food preparation area.
Unless adequate steps are taken to effectively manage FOG at source, local health and hygiene management is under extreme risk from the effects of odour, contaminated water and vermin. There area number of methods available to the specifier and user to manage FOG and an appreciation of the merits and disadvantages of each
system will be provided along with performance indicators.
Hygiene management is essential and Regulation (EC) 852/2004 applies to all food businesses and food operators. Article 5 (1) requires that permanent HACCP procedures are applied and importantly, drainage forms a pre-requisite to the supporting structure of HACCP.

The four Green segments are:
Behavioural Greens: This group of people thinks and acts green. They have negative
attitudes towards products that pollute and incorporate green practices into their lives
on a regular basis.
Think Greens: This group of consumers think green, but don’t always act green.
Potential Greens: This group neither behaves, nor thinks along particularly
environmentally conscious lines and remains on the fence about key green issues.
True Browns: They are not environmentally conscious, and may in fact have negative
attitudes about environmental issues.

value of it’s green service program to both employee and customers.

A structural IPM program must be implemented, which
emphasises three fundamental elements:
1. Pest prevention
2. Multiple management strategies & tools
3. System approach

1. Establish a partnership
2. Record a detailed history about the pest problem for the customer
3. Thoroughly inspect the property (Including Identify pests, prepare maps and
lists)
4. Discuss inspection findings with customers including pest/problems, location

5. Discuss management strategies with the customer, including the relationship
needed between Pest manager and customer to solve the problem and
provide information about the green service options been used.

• With most pesticides, the longer you are exposed the greater the chance of harm
• Some people are more at risk than others, depending on their age, gender, individual
sensitivity, or other factors.
How are people exposed to pesticides?
People can be exposed to pesticides in three ways:
• Breathing (inhalation exposure).
• Getting it into the mouth or digestive tract (oral exposure).
• Contact with the skin or eyes (dermal exposure).
