Rice contains several important nutrients. Through a series of experiments, it was determined that rice contains:
- Starch, as indicated by the rice turning black when tested with iodine.
- A small amount of protein, as the rice mixed with Biuret solutions turned a light blue color.
- A small amount of glucose, as the rice mixed with Benedict's solution turned green.
- Very little fat, as rubbing rice on paper did not leave much residue.
Rice's main nutrient is starch. In the digestive system, enzymes break down the starch in the mouth and further breakdown occurs in the duodenum and ileum to allow absorption of sugars, fats,
