Definition of Salting (Salted Egg):
Salting, in the context of salted eggs, refers to
the process of preserving eggs by soaking them
in a brine solution, typically made with salt and
sometimes other ingredients. This method
imparts a unique flavor to the eggs and changes
their texture, resulting in what is commonly
known as salted eggs. Salted eggs are a popular
delicacy in various cuisines and are used in a
variety of dishes.
INGREDIENTS AND MATERIALS NEEDED FOR SALTING EGGS
(SALTED EGG):
• Eggs: Fresh and preferably duck eggs are commonly used.
• Salt: Usually coarse sea salt or rock salt is employed for the brine
solution.
• Water: Clean, preferably boiled and cooled water.
• Optional Ingredients: Some recipes may include additional
ingredients such as me, tea leaves, or charcoal for added flavor
and color.
Steps or Procedure in Making Salted Eggs:
The process of making salted eggs involves
several steps:
Cleaning: Ensure that the eggs are clean and
free from any cracks or defects.
Brining: Submerge the eggs in a brine solution
made of water and salt. The eggs need to be
completely covered by the brine.
Soaking: Allow the eggs to soak in the brine for a
specific duration, typically ranging from a few
days to weeks. The soaking time affects the
intensity of saltiness and the texture of the
eggs.
Storage: After soaking, the eggs are often air-
dried or coated with a mixture of clay and salt
before being stored. This helps to enhance the
preservation process.
Precision and accuracy in the salting process are crucial
for several reasons:
• Flavor Consistency: Accurate measurement of salt
and adherence to the soaking duration ensure a
consistent and balanced flavor throughout the batch
of salted eggs.
