To make tempe fritters (bregedel tempe):
1. Mash 150g of tempe and mix with a spice paste made from chilies, shallots, garlic, galangal, candle nut, coriander seeds, salt, and shrimp paste. Add 2 tbsp fried shallots, 3 kaffir lime leaves, 1 tbsp flour, and 1 egg.
2. Shape the tempe mixture into golf ball sized fritters and flatten slightly.
3. Heat oil in a wok and fry the fritters until golden brown on both sides. Drain on paper and serve hot with rice.
