3. Jelly is a semi solid food product prepared by
boiling clean solution pectin containing fruit
extract which is force from pulp with sugar and
citric acid. A perfect jelly should be transparent,
well-set and retain its shape when remain from
mould. It should not be too stiff or too syrupy.
For proper gel fermentation pectin sugar, acid
and water are required. In highly concentration
sugar solution, The sugar takes up water from
pectin, molecules as a result some yields are
products in pectin, molecule as result finally a
stable gel in produced.

• Weight the row material

• Cut into equal size pieces
