generation of eco conscious, urban customers.
‘Gastronomy is the reasoned knowledge of everything that concerns man as he eats; it facilitates
choice, because it helps us to understand what quality is.’ Carlo Petrini (Slow Food)

LOCATION CONTEXT
Munro House on Duke Street Leeds is the
location for the GastroMarket.
The reception desk acts as a divide between the two entrances to
the GastroMarket, the lift and the stairs. Along the right side there
are shelves intended to display possible products and produce from
the market, and a chalk board that will display the dishes that are
being cooked in the cookery school that day.

meals, displaying recipe and produce information to encourage
experimentation and creativity.
At the core of the Gastromarket is a kitchen and cookery school
that places the kitchen at the very heart of the market experience,
and encourages customers to slow down, to make considered choices
and to be inspired by their surroundings.

5. Not only is left over produce used to create meals in the kitchen
but the kitchen is designed to filter water to be used to water
the herb gardens that are in the space. Bio waste is put into the
inbuilt composter which can be turned into compost and given to
the farmers to help grow their produce.
The name GastroMarket combines Gastronomy (the study of food
and culture) and the traditional food market. The term Gastro
is intended to replace the word Super that now typically comes
in front of the word market thanks to the bigger chain stores
people have come accustom to shopping in through convenience.

recycled and an inbuilt water filter allows for water to be reused to water
the herb gardens. The herbs will be used by the chefs to flavour their food.
