Cracroft Chase Vineyard and Winery is a 5 hectare pinot gris vineyard located in Christchurch, New Zealand that was planted in 1998 by Italian expatriates Alex and Wilma Laryn. The winery on site handles all operations from harvesting to bottling in their small on-site laboratory. They aim to produce a complex, food-friendly wine from their annual crush of 30-40 tonnes that results in 15,000-20,000 litres of wine volume. Their winemaking process includes different treatments of the juice such as free run, pressings, skin maceration, and tank and barrel fermentation followed by malolactic fermentation before final blending and bottling.
