This document provides a recipe for a Podlaski cooler from Podlaskie Voivodeship in Poland. It consists of beetroot, cucumber, radish, yogurt, herbs, eggs, garlic, salt and pepper. The cooler is easy to make, saves time in the summer, and provides vitamins and protein. To make it, beetroot is boiled and cooled before mixing with the other vegetables and yogurt, then refrigerating for an hour before serving topped with eggs and herbs. An alternative version skips the beetroot.
