The Guild School model (Flexible pathways) is based on peer learning among students, where mistakes are allowed and understood as a positive aspect of learning. The basic principles of flexible learning pathways are that information is shared transparently and all information is communal. The master-journeyman-apprentice model is implemented with cognitive learning principles. In the Guild School model, active learners acquire strong professional skills and working life skills in practical work by exploiting digital media and media. An entrepreneurial attitude towards new learning and engagement goes a long way.
In the Guild School model active vocational students, utilizing digital tools and media, gain strong professional and working life skills in practical work tasks. The entrepreneurial attitude towards learning new things and getting involved in action carries a long time. Teamwork and coaching skills are up-to-date, and competence-based learning to observe, document, and reflect on your own work support the growth of your professional skills during your career. The development of knowledge, skills and attitude in the areas of expertise will continue throughout life and will also benefit the student in future when changing the professional field and expanding skills.
Guild School method will be used in the project from the planning phase on: Using the flexible learning pathways can be seen as a kind of a pedagogical model. The key benefits of peer learning are that it supports learning new things in a new way and helps to use one’s expertise in practice. All information is available to everyone, e.g. through web site or social media. Teacher’s role is to guide, give advice and make sure that the students gain job-specific skills that are crucial in today’s rapidly evolving labor market.

Global Classroom Stories & Launch (#GlobalEd12)Michael Graffin
The Global Classroom Project is envisaged as an online education community where teachers and students can connect, share, learn and collaborate on a global stage.
Over the course of the past two years, this vision has been brought to life by a team of dedicated educators around the world.
In the course of 2011-12, we hosted over 15 major global projects, and saw our education network grow to include over 300 teachers, and several thousand students. Our project blog and wiki have become vibrant spaces for sharing teachers’ global projects, and our Facebook and Skype groups have proved to be extremely valuable spaces for teachers to connect, and build global friendships.
This presentation hosted several major project announcements, and marked the official launch of Global Classroom 2012-13.

Open Learning Champions - a model for widening participation
The Open University in Scotland operates a network of Open Learning Champions, working in partnership with a range of voluntary sector organisations, community learning groups, libraries and others. The aim is to provide open learning in familiar spaces using open educational resources (OER) on OpenLearn and OpenLearn Works, as well as massive online open courses (MOOCs) on FutureLearn. The project has managed to successfully engage with people who may not otherwise consider themselves 'learners', and who may face significant barriers to accessing more traditional widening participation programmes.

How do I evaluate our student's competence?
Case module: Local Food, creating menus
The purpose of this module is to provide an understanding of menu planning. Student creates a menu which includes locally produced raw materials and innovative marketing concept (story behind the food).

The project is implemented in cooperation with VTT, Aalto University, Omnia and partner companies.

Kestävän kehityksen digitaaliset osaamismerkit on suunniteltu ravintola- ja cateringalan perustutkinnon osien mukaisesti. Tästä syystä Healthy Future -kehitysprojekti on laajuudeltaan ensimmäinen laatuaan ammatillisessa koulutuksessa Suomessa.
Julkinen sektori tarjoaa yli kuusi miljoonaa ateriaa päivittäin pohjoismaissa. Näiden aterioiden tulee olla ravitsemuksellisesti terveellisiä ja kestävän kehityksen mukaisia. Tällä hetkellä useiden kuntien ruokapalvelujen toteutuksessa kestävän kehityksen uudistukset ovatkin otettu huomioon vaihtelevasti. On kyse sitten elinkeinoelämästä tai julkishallinnon piirissä toimivissa organisaatioista kuten kouluista, niin keskustelua käydään tulevaisuuden kestävän kehityksen toimenpiteistä. Tästä syystä tutkimuksessa tutkittiin kestävän kehityksen vaikutusta ruokahävikin näkökulmasta.
Kehittämistyössä selvitettiin Omnian, opetusravintola Herkun opiskelijaruokailusta syntyvän biojätteen määriä. Tutkimushankkeen pyrkimys oli löytää kestävän kehityksen mukaista toimintaa, jolla voidaan vähentää ruokahävikin syntymistä Omnian opiskelijaruokailussa. Tutkimus rajattiin koskemaan Lakelankadun toimipisteessä toimivaan opetusravintola Herkkuun. Kehittämistyössä tutkittiin, mikä on opetusravintola Herkun suurin ruokahävikin aiheuttaja (valmistus, tarjoilu vai lautashävikki). Tutkimuksessa hypoteesina oli se, että opetusravintola Herkun alun perin syömäkelpoinen lautashävikki olisi suurin hävikin aiheuttaja. Tutkimusongelmana oli ”Miten Omnian ruokahuollossa voidaan vähentää opetusravintola Herkun ruokahävikkiä?
Tämä kehittämistyö toteutettiin Omnian toimeksiantona. Omnia kuuluu alueelliseen kestävän kehityksen RCE Espoo – asiantuntijaverkostoon, joka on olennainen osa Omnian toiminnan laadun kehittämistyötä. (Edu.fi.) Kehittämistyö on laadullinen eli kvalitatiivinen toimintatutkimus, jonka tavoitteena oli vaikuttaa Omnian opetusravintola Herkun toimintaan havainnoimalla kertyneen hävikin määriä mittaamalla kertynyttä biojätettä. Hävikin määriä voidaan mitata monella tapaa. Tässä tutkimuksessa kehittämistyö toteutettiin punnitustutkimuksena sekä teema haastatteluilla ja asiakaspalautekyselynä.
Tutkimusjakson aikana ruokaa valmistettiin 1623 kg. Tästä määrästä hävikkiä kertyi yhteensä 342 kg. Suurin osa hävikistä koostui lautashävikistä keskimäärin 7 %, tarjoiluhävikki 4 % ja keittiöhävikki 6,5 % Tässä tutkimuksessa tehtyjen laskelmien perusteella vertailuviikolla alun perin syömäkelpoista (OE) lautastähdettä syntyi keskimäärin 50 g päivässä per syöjä kun vastaavasti seurantaviikolla saimme vähennettyä keskimääräistä hävikkiä 6 g per syöjä. Tämä tarkoittaa keskimäärin 44 g lautasjätettä (OE) henkilöä kohden päivässä.
