A’ La Carte
• Offers each food and beverage item priced
and served separately
• It allows the guest to choose dishes whose
prices are within his/her budget
• It is necessary to inform the guests about the
time the preparation might take.
Table d’ hote
• It lists complete meals, from appetizers to
desserts and sometimes beverages, for one
set price. “host’s table”
• An example… A banquet menu
• It offers one or more variants of each dish for
fixed prices. (almost similar to prix fixe)
Static Menu (Fixed)
•Offers the same dishes every day for a long
period of time.
•Where would you see this? Hotels, Ethnic
Restaurants, Fast Food Operations

Cycle
• This menu is used for a set period of time,
such as a week a month or even longer. At the
end of this time period this menu repeats.
• Where would you see this? Hospitals, Schools,

Du Jour or Daily Menu
• Lists dishes that are available on that
particular day
• Where would you see this? Specialty
Restaurants
• You will often see…
Soup Du Jour
A.K.A.: Soup Of The Day
Semi’-A-La-Carte
• You will find appetizers and desserts priced
separately. The entrée will probably include a
soup or salad, side dishes and possibly a
beverage.
Prix Fixe
• Similar to a table d’hote because it
offers a complete meal for one set price
but customer chooses one selection
from each course offered.
• Where would you see this? Elegant
Restaurants
Meal-based
• A menu that shows dishes available for a
single meal. Such as just breakfast, lunch,
dinner or ethnic.
• Stacks Restaurants: Breakfast Menu
Breakfast Menu
• A menu that shows dishes available for a
breakfast meal. Offers like :
• Juices, Cereals, Eggs, bacon , sausages or ham,
waffles or pancakes with maple syrup
Lunch Menu
• A menu that shows dishes available for a
Lunch meal.
• A lunch menu must be easy to read and food
included therein must be produced quickly
• Composed mostly of light and often informal
meals.
Dinner Menu
• A menu that shows dishes available for a
Dinner meal.
• More elaborate as guests have more time and
leisure for eating.
• Larger food serving portions
• Alcoholic drinks are an essential part of dinner
Children’s Menu
• A menu that shows dishes available for a
Children.
• Typically has burgers , fried chicken, hotdogs,
sandwiches, French fries, noodles, ice cream
and softdrinks
• Serving portion are usually smaller and are
often priced lower.
Dessert Menu
• Offered by the restaurants that have good
patisserie.
• Most outlets with this specialty would have
captive confectionaries to give them an edge.
Tourist Menu
• A menu that shows dishes available for Tourist
• Usually posted on the board outside a
restaurant, usually with attractive headline
price.
• The tourist menu price can seem a big saving
on individual dishes but for a good reason.
California
• It lists breakfast,
lunch and dinner
meals available all
day long.
Continental
• Provides a selection of juices, beverages and
baked goods. (usually only for breakfast)
Ethnic
• Represents food choices from a specific
country.
The Challenge at hand
(Group performance task)
• Read about your type of menu and write down the
description.
• Do a google search on your specific type of menu.
• Write down two advantages and two disadvantages for
your type of menu.
• On your research, pull up each one of your “selected”
restaurant websites and look at the menu examples.
• Download or do an example and be ready to show your
group sample (menu)to the class
• Do a scenario about Presenting the menu to the class
Completing the Challenge
• You are now an "expert" on your menu
type. Each “expert” will now share…
a. which menu type
b. description of that menu type
c. advantages and disadvantages you
found on your specific menu type
d. Share your printed menu sample
with the group
• You are done with the challenge when
you have seen and learned about each
type of menu.
