A $5.0M foodservice design firm specializing in projects for the Casino Industry.
Project Manager
Programming, planning and preparation of specifications and drawings for the bidding of food service
equipment and furniture packages for projects.
Lead the marketing research and discovery phase to align end result design and equipment selection
with design team vision.
Minimize field coordination challenges through excellent coordination of architectural and engineering
disciplines to produce drawings and specifications resulting in highly accurate bid documents.
Provide Construction Administration services meeting drawing and specification requirements while
providing creative solutions to on-site construction variances.
Projects of note at JEM Associates:
Grand Valley State University: Grand Rapids, Michigan – Food court and convenience store in
a new classroom building on campus. Adjacent residential units have kitchens so the store
incorporated grocery items along with convenience items. This building was designed to apply for
Silver LEED status. Energy and water usage was considered in equipment and building system
selection. Incorporated an innovative glycol refrigeration system to limit the amount of refrigerant
on the project and gain a LEED point not available using a standard refrigeration system. Variable
speed exhaust hood system automatically varies exhaust rate based on optical and temperature
sensors that monitor cooking effluent. Design met the flexibility requirements for labor during the
varying participation rates over the 18 hour operation day.
The Union League: Philadelphia, Pennsylvania – conversion of the existing North Marble Room
to a fine dining restaurant with an exhibition kitchen. The dining room is designed with a large
window exhibiting a European-style cooking suite. The South Marble Room is designed as a new
buffet restaurant.
Indiana Live!: Shelbyville, Indiana - 68,000 square foot temporary casino facility. Food court to
be operated by Wolfgang Puck Catering offering a full menu for casino patrons. Includes full-service
bar and two service bars for 20 hour a day operation. The flexible design supports both labor
reducing strategies and high volume requirements. 70% of equipment to be reused in the permanent
casino building that is under construction. Design, bidding and award of equipment contract was
completed on an accelerated 30 day track.
ORLANDO ESPINOSA AND ASSOCIATES – Glen Mills, Pennsylvania 2005 - 2008
$850,000, 4 year start up marketing and design firm serving the higher education, healthcare, sports and
entertainment industries.
Partner and Project Manager, Food Service Design
Start up company specializing in market research, planning and development of projects in the hospitality
industry. Key constituent in the development of the business plan, implementation and sales effort for
this new company. Responsible for all project management responsibilities in addition to establishing the
professional vision and culture of a start up company to ensure market differentiation and leadership.
2. Projects of note at Orlando Espinosa + Associates:
Nationwide Insurance: Des Moines, IA: Call Center Cafeteria and Convenience Store –
Interfaced with corporate real estate team, architects and operators to deliver a $1.0M equipment
package for a market-style serving area with open kitchen. Included a Coffee Bar and Convenience
Store at the main building entrance.
The Milton Hershey School: New Supply Center – Led the team in specifying a $2.4M
equipment package for the new central supply center.
The Milton Hershey School: Old Senior Hall Renovation – Developed a $575,000 equipment
package for an addition to the historic Old Senior Hall to convert it to the new middle school.
The Milton Hershey School: Purcell Friendship Hall – Supervised the conversion of a historic
dairy barn into an Alumni conference center. Relationships built within the campus community
made this the third project on campus, each with a different architect. Orlando Espinosa +
Associates was the only consultant used on all three projects.
