1. How to make a Tarte Tatin

At the first, take the ingredient:
For the paste: -200g flours , -100g butter , some salt and sugar and 1/3 of a water glass
For the garnish: -1,5kg apples ,- 125g butter , 125g sugar , 2 sachets of vanilla sugar and some
cinnamon
Now, making the paste,
Mix the flour and the butter in a bowl with your hands to the paste no longer sticks your hands then
take the water and mix again all with your hands. With that make a little ball of paste, coat her in
plastics or aluminum and put her in the fridge for 1 hours.

Now, make the garnish,
Peel the apple (during you peeling the apples put the other apple in the water or they blacken)and
cut them into 4 parts, then put the butter, the sugar and 1 vanilla sugar sachet in a stove for making
the caramel, when the caramel begin to brown put the apple in the stove. During the baking use the
cinnamon and the vanilla sugar for embellish the apple. When the apples are brown pull them to the
fire and recover the caramel.

Now, cook the pie,
Put the apples in a little flat, they must sticks between them, then cover them with the paste who is
in the fridge. Take the flat and put this in the furnace for 30 minutes at 200°C. After the baking, wait
the pie is less warm then back them in a plate and take the surplus of caramel and put them on the
pie. Now you have finish to cook a Tarte tatin.
