- 1. Summer Drinks Mojito Rocks Glass Garnish-None Ingredients (Mint) • 1 oz of Bacardi Rum • ½ oz of Peppermint Schnapps • 5-7 Mint Leaves • 4 Lime Slices • 1 oz of Simple Syrup • 3-4 oz of Soda • Splash of Lime Cordial Ingredients (Berry) • 1 oz of Bacardi Rum • ½ oz of Sour Berry • 4-5 Mint Leaves • 3 Lime Slices • 2 Tea Spoons of Berries • ½ oz of Simple Syrup • 3 oz of Soda • Splash of Lime Cordial Place mint and/or berries with simple syrup, in a rocks glass and muddle them. Squeeze and add lime slices, then add the alcohol and stir. Fill glass about 2/3 from the top with crushed ice and stir again. Top off with soda. Tropical Silk Cocktail Glass Garnish- An umbrella and cherries skewered on a spear. (Red, Yellow and orange) Ingredients • ¾ oz of Coconut Rum • ¾ oz of Hpnotiq • 4-5 oz of Pineapple Juice • Coconut Sugar Rim the cocktail glass with coconut sugar and fill with ice. Add alcohol and fill with pineapple juice. Emperor’s Lemonade Rocks Glass Garnish-Lemon Slice and skewered cherry Ingredients • ¾ oz of Gold Alize • ¾ oz of Vanilla Vodka • 4-5 oz of lemonade • 1/2 oz ginger syrup Fill shaker with ingredients and ice. Shake and pour into rocks glass. Spear a lemon slice and Cherry and place across top of glass. Bangkok Sling Rocks Glass Garnish- Orange Wheel skewered with cherry Ingredients • ¾ oz of Blue Cacao • ¾ oz of Beefeater Gin • 2-3 oz of Orange Juice • 2 oz of Pineapple Juice Fill rocks glass with ice. Pour in Gin and juices and add straw and garnish. Then swirl the Cacao on top at the table. Eastern Caesar Cocktail Glass Garnish- Asparagus Ingredients • 1 ½ oz of Vodka • 5-6 oz of Caesar • 2 squeezed limes • ½ of teaspoon of Silk Spice • Curried Rim Fill cocktail glass with ice and add the alcohol, and spice. Pour in Caesar and gently stir. Squeeze in lime juice and Garnish. - 3. Fill wine glasswith ice, and build ingredients. Add Sprite and Garnish last. Frozen Drinks Silk Bellini Daiquiri Glass Garnish- Slice of Mango Ingredients • 1 oz of Brandy • 1 ½ oz of Mango Pulp • ½ oz of Mango Liqueur • 1 oz of White Zinfandel • Dash of Grenadine Pour the Brandy and Mango Pulp into the Oasis blender. Hit the #1 button and pour into glasses. Zigzag Grenadine along the top, and gently pour in the Zinfandel. Place the garnish and serve. Banana Split Daiquiri Glass Garnish- Maraschino Cherry Ingredients • ⅔ oz of Banana Liqueur • ⅓ oz of Vodka • ½ oz Butterscotch Liqueur • 2 oz of Ice Cream mix • Dash of Chocolate • Dash of Butterscotch Pour the Alcohol and Oasis mix in the blender and press the #1 button. Crisscross the chocolate and butterscotch across the top and add cherry. Daiquiri, Pina Colada, and Margarita. Daiquiri Glass Garnish- Lime Slice Ingredients • 1 oz of Tequila or Rum • 3 oz of Mix • Sugar or Salt rim Pour the Alcohol and appropriate mix in the Oasis blender and press #1 button. Double all the ingredients and press the #2. Triple all the…and press the #3. Daiquiri and Pina Colada- Rum with Pina Colada mix, Strawberry or Mango mix. Add a sugar rim. Margarita- Tequila and Lime mix. Add a salt room. Iced Cappuccinos Pop Glass Garnish- Maraschino Ingredients Regular • 1 shot of espresso • 3 creamers • Simple Syrup Ingredients Chocolate • 1 shot of espresso • 6 Creamers • Chocolate Syrup Mix the espresso and creamers in the measuring cup. Add a dash of Worchester, salt and Pepper. Ask customer how spicy they want it and add an appropriate amount of Tabasco. Caesar- Add Clamato Juice. (Celery Rim) Mary- Add Tomato Juice. (Salt Rim) Shirley Temple Pop Glass Garnish- Maraschino Cherry on a spear. Ingredients • 2/3 Glass of Ginger Ale • 1/3 Glass of Orange Juice • Dash of Grenadine Mix Juice and Gingerale over ice. Drizzle Grenadine and add Cherry. 5
- 6. Specialty Warmers Coffees Glass CoffeeMug Garnish- Whip Cream and chocolate or a Sugar Rim Directions Unless the Guest asks for whip cream, rim the glass with sugar. Pour the alcohol into the mug, and add the coffee. If no sugar, then add whip cream and drizzled chocolate. Teas Glass Coffee Mug Garnish- None Directions Warm a sifter, and add the alcohol. Serve on the side of a regular tea setup. Blueberry Tea- Made with Orange Pekoe Pomegranate Tea- Made with Pomegranate Green Tea Apple Cider Glass Coffee Mug Garnish- Cinnamon Stick Directions Pour the cider powder and alcohol into the mug. Fill half way to the top with hot water, and stir. Fill to the top with hot water and add garnish. Serving Liquor Aperitifs and Port Port Glass Aperitifs- 2oz Port- 30z Cognacs, Brandy and Scotch Cognacs/Brandy- Large Sifter Scotches- Small Sifter Directions Cognacs/Brandy Fill a sifter half way to the top with hot tap water. Swirl and empty. Fill an inch or two with boiling water, swirl and empty. Pour in the liquor and server Scotch Ask the guest if they prefer, Neat on the Rocks or with Water. Neat- Straight up in a sifter Rocks- On ice in a sifter Water- Served neat with water on the side 6
