Online session presented at SETI 2020 event (Federal University of Lavras) in Brazil this week (Nov, 9th, 2020):
"If I were in your shoes, and judging from the title, I would say at once: "Damn! It has nothing to do with technology." But it really does a lot. The idea behind this talk is to show how our food is also being digitized. And yes, the Digital Transformation is already impacting our "daily rice and beans". This dialogue will be an excellent opportunity to talk about the technologies of Cultivated-Meat, Plant-Based Meat and Fermentation. And yes, the simulation of dairy products will also be part of the menu, I mean, of the conversation. The session aims to tackle the topic in an introductory, consult-oriented, and deviant way to exercise Future Thinking on the topic. After all, we are living in the great moment of "digital symbiosis" between the branch of Biotechnology and IT technologies."

7. Nicolas Appert
Nicolas Appert is considered father of food
technology. He was a French inventor of
airtight food preservation and developed in
1800s a method for preserving food in glass
jars - Appert described his invention as a way
"of conserving all kinds of food substances
in containers”.

University and was the first to showcase a
proof-of-concept for cultured meat by
creating the first burger patty grown
directly from cells.

Bill Gates has at different times invested in
startups focused on developing artificial or
plant-based alternatives to meat, such as
Nature’s Fynd, Hampton Creek, Memphis
Meats, Beyond Meat and Impossible Foods
(US$ 75 million in 2015).

21. What is
Plant-Based Meat?
Plant-based meat is meat made
from plants. It is especially designed
and created to look like, taste like,
and cook like conventional meat.

23. Three interesting facts about the
way we eat:
Today, 75 percent of the world’s food is
generated from only 12 plants and five animal
species.
Of the 4 percent of the 250 000 to 300 000
known edible plant species, only 150 to 200 are
used by humans.
Only three - rice, maize and wheat - contribute
nearly 60 percent of calories and proteins
obtained by humans from plants.

26. What is
Cultivated-Meat?
This is created by painlessly harvesting
muscle cells from a living cow. It is a
form of cellular agriculture and the
result is biologically the same as the
meat tissue that comes from a cow.
28. Interesting facts:
Before cultivated meat can come to market, a
regulatory framework must be in place. In March
2019, the USDA and FDA released a formal
agreement outlining regulatory roles for FDA and
USDA.

put out Plant-Based products to the demand for
meat substitutes. Guessing if are there any plans
to start developing in Cultivated Meat segment?
Largest investment in 2019 was US$ 20 million in
BlueNalu startup (fish meat).

30. Fermentation?
The term “fermentation” carries distinct
meanings across different disciplines.
In the alternative protein industry,
“fermentation” refers to cultivating microbial
organisms for the purpose of processing a
foodstuff.

Precision Fermentation
Technology
Trichoderma Reesei
(Microflora)
Precision fermentation is a technology that enables the
programming of micro-organisms to produce complex organic
molecules, such as proteins, at a fraction of the cost we do now.

Start with microflora,
specifically a type of
fungi.

The microflora is
given a blueprint
through biotechnology.

The blueprint allows
the microflora to
ferment sugar and
create whey and
casein.

This process results
in dairy protein.
5
The proteins are
mixed with water
and plant fat to make
milk.

They can use the
milk to make dairy
products such as ice
cream.

33. The FDA’s Definition for Milk
“Milk means the lacteal secretion, practically free from colostrum,
obtained by the complete milking of one or more healthy cows,
which may be clarified and may be adjusted by separating part of the
fat therefrom; concentrated milk, reconstituted milk, and dry whole
milk. Water, in a sufficient quantity to reconstitute concentrated and
dry forms, may be added.”
