This document discusses food allergies, which affect the immune system's response to certain foods. The most common food allergens are milk, eggs, peanuts, tree nuts, shellfish, fish, wheat, and soy. Symptoms of food allergies include hives, itching, sneezing, coughing, and swelling of the tongue or throat. Eight foods - milk, eggs, peanuts, tree nuts, wheat, soy, fish, and shellfish - account for about 90% of allergic reactions. The proteins that cause allergic responses differ between foods, such as beta-lactoglobulin in milk and penuts-I in peanuts.
